This recipe is what happens when you combine the Italian technique and let Greek flavors take over. Instead of relying on tomatoes, fresh basil, and balsamic or red wine vinegar, you bring in cucumber for crunch, feta for creaminess, red onion for some bite, and a little jalapeno for some heat. The result, a great appetizer with fresh flavor. A familiar combo like classic bruschetta but tastes way more interesting than Italian bruschetta.
Greek Bruschetta Ingredients
This easy Greek bruschetta appetizer has bold Mediterranean flavor with very minimal cooking required. I have tested different ingredients so I will give you my notes and helpful tips based on what gives me the best results.
Feta Cheese – The base on this Greek bruschetta is a feta cheese spread. To make this I used crumbled feta because I buy it in bulk at Costco, but you could also use a block of feta. This can be found in the grocery store in the cheese section or sometimes near the deli.
Jalapenos – The feta spread is spicy which comes from the jalapenos. If you are not into spicy food, you can skip this ingredient, but the full flavor may be lost. You can increase or decrease the spice level by removing the seeds or leaving them in when using fresh jalapenos.
If you leave the seeds in it will be a lot spicier. I usually remove the seeds from one jalapeno and leave the seeds in from another. I find this to be a medium level of heat, but you should always taste your jalapenos first as the spice level can vary depending on how long they were on the vine.
Garlic – When I cook I almost always use jarred garlic, because it is easy and it keeps for a long time in the fridge but you can also use a full garlic clove.
Lemon Juice – To balance out the dip and add some acidity to the salty feta cheese I added a little fresh lemon juice.
Olive Oil – I used a little olive oil to thin out the feta dip. A good substitute would be avocado oil because of its neutral flavor.
Onion Powder – When I make dips I find that dried seasonings can provide a bit more flavor so I used onion powder here rather than fresh onion. But you could also make this with a red onion as well.
Black Pepper – For a little bit of extra seasoning.
Onion – A red onion works best here for the sharper flavor and it is what you would find in a typical Greek salad.
Tomato – Fresh tomatoes add some acidity that helps balance out the richness of the feta spread and pairs really well with Greek flavors. Use ripe but firm tomatoes. Romas work best because they have less water and more flesh. I have used both Roma tomatoes diced small and grape tomatoes quartered. From a flavor perspective, both work but you can get a smaller dice with less water using a Roma.
Cucumber – This one little ingredient adds a ton of fresh flavor to this simple appetizer. A regular cucumber or English cucumber will work here. Just make sure to dice them small.
Bruschetta Toasts – For this recipe I make my own toasts out of French bread. It’s super easy, only takes 15 minutes, and gives you nice crusty bread. This is also the most cost effective method. But feel free to use store bought bruschetta toasts if you like. Just make sure you get plain toasts as some are pre-flavored. If you are in a pinch you could also use Italian bread.
Preparation
First you will need to make the bruschetta toasts. The best way to do this is to bake the French bread in a single layer on a cookie sheet.
Next you will need to make the crazy feta spread. The best way to make this is to toss it all into a food processor and let it do the hard work for you.
The best way to prepare the onion, tomato, and cucumber is to dice them into small cubes. This allows for more toppings on each bruschetta toast. I use this slicer to get a small dice and it works like a charm and speeds up the prep.

Description
Take your appetizer game to a whole new level with this easy Greek bruschetta recipe. A simple combination of a crunchy crostini, creamy, salty feta, crisp cucumber, ripe tomatoes, fragrant garlic, and just enough heat to make you feel alive. The bread stays crunchy. The toppings stay put. The perfect Mediterranean-inspired appetizer that is way more interesting than traditional bruschetta.
Ingredients
- 1/2 cup Feta Cheese
- 2 Jalapenos (1 with seeds, 1 without)
- 2 tbsp Extra Virgin Olive Oil
- 1 tsp Garlic minced
- 1 tsp Lemon Juice from 1/8 of a Lemon
- 1/4 tsp Onion Powder
- 1/4 tsp pepper
- 1 French Bread Loaf
- 2 tbsp Olive Oil
- 1 Roma Tomato diced
- 1/4 Cucumber diced
- 1/4 Red Onion diced
Instructions
- Preheat the oven to 350 degrees and prepare a baking sheet with a baking mat, parchment paper, or aluminum foil.
- Using a bread knife, slice the French baguette into slices about 1/4 inch thick. If the bread slices are too thin they will fall apart and if they are too thick the bread to topping ratio will be off.
- Place the baguette slices onto the baking sheet and either brush them with olive oil or spray them with a Misto sprayer.
- Bake for 10-12 minutes until they are lightly golden brown and a little crunchy.
- While the bread bakes, add feta cheese, olive oil, garlic, lemon juice, onion powder, and pepper to a food processor.
- Slice two jalapenos in half. Remove the seeds from one and leave the seeds in the other. If you like milder heat remove all the seeds. Add all of the jalapenos to the food processor.
- Pulse in the food processor until all items are combined. Set aside.
- Dice the cucumber, Roma tomato, and the red onion. This is the bruschetta mixture. You want the pieces to be quite small to allow for more toppings on the bruschetta.
- Once the bread is baked and cooled for a few minutes, use a spoon to smear about a half a tablespoon of the feta mixture onto each slice of bread.
- Top each bread round with a handful of the bruschetta mixture (tomato, onion, and cucumber).
- Sprinkle the top with a little bit of extra feta cheese.
Notes
Note, these will get soggy as they sit. I do not recommend making these ahead of time. If you are running short on time, the bruschetta toasts and the crazy feta mixture can be made ahead of time and the bruschetta mixture can be chopped ahead of time, but do not assemble until ready to serve.

Storage/Leftovers
Bruschetta is one of those things that’s best eaten immediately because it can become quite soggy. If you MUST store leftovers, store the bruschetta tomato mixture in an airtight container in the fridge for up to 2 days. It’ll get juicier as it sits, so drain off any excess liquid before using. The crazy feta can be made in advance and stored separately for up to 3 days. The bruschetta toasts, store in an airtight container at room temperature for up to 5 days.
