Viral Fresh Mediterranean Style Chicken Smash Taco

What are Smash Tacos?

If you have not seen the smashed taco trend yet, let me explain. It started with a TikTok – make video. A creator combined the smash burger with a tortilla and reinvented how a taco can be made. Instantly this trend went viral.

Essentially a smash taco takes the taco meat and smashes it on a tortilla. The taco is then cooked with the meat side down. Once the meat is cooked, you fold it like a taco and fill it up with your favorite toppings.

I was inspired by this smash taco concept but decided to combine it with my new CAVA obsession for a Mediterranean makeover twist. Instead of a traditional ground beef taco I used chicken and added a bunch of fresh toppings typically used in Mediterranean cuisine. These are legit my favorite!!!

Ingredients

This easy smash burger tacos recipe is so simple to make and only requires a few basic ingredients and steps. Let me walk you through what I use and why and what ingredients will give you the best results.

Ground Chicken – For this recipe I used ground chicken for the meat of the taco. Because the the other flavors are bold, chicken is a good neutral pallet. You could also use ground turkey, but I have not specifically tested it.

Tortillas – I usually use a single layer of the small tortillas, but not the street taco size. I feel those are a little too small. I normally use flour tortillas because corn tortillas tend to fall apart very easily and these have a fair amount of filling. But you can definitely use corn instead if you prefer or are gluten free.

Hummus – Hummus is traditionally found in Mediterranean cuisine and it adds an extra bit of flavor and protein to these tacos. I make my own homemade harissa hummus for this. It is an easy recipe that uses red peppers, chick peas, and does not require tahini. But you can also use store bought hummus if you prefer.

Coleslaw Mix – This ingredient is not required but in my opinion it adds a good crunch. I like to keep things easy and buy a bag of pre-shredded cabbage mix and I add in a small amount of this lemon basil vinaigrette dressing. You could also dress it with just a little olive oil, lemon juice, and salt and pepper if you don’t have dressing on hand.

Onion – I chose to use a red onion here for the sharper flavor and because they are not cooked. But you can use a yellow or white onion as well.

Tomato – Tomatoes add some acidity that helps balance out the richness of the hummus and other ingredients. I have used both Roma tomatoes sliced small and cherry tomatoes quartered. Either works just fine.

Cucumber – This one little ingredient adds a ton of freshness to these tacos. Regular cucumbers or English cucumbers both work here. I have used both.

Avocado – Avocado is one of my favorite taco toppings and I love adding avocado pieces for a bit of creamy texture. I only used a few slices per taco because these are very filling as is.

Feta Cheese – Feta is a very common ingredient in Mediterranean dishes and adds a bit of extra flavor and salt to the tacos.

Meat Seasoning – Before making the tacos I season the ground chicken with garlic powder, salt and  pepper. This gives the meat a bit of extra flavor.

Cooking Method

The easiest way to make these is on the stovetop on a griddle pan or on a flattop grill pan. If you do not have one you can also make them in a large skillet but it may take longer if you cannot fit more than one at a time. I can make two at a time on my griddle pan or all at once on the flattop grill insert.

Ingredients

  • 1 lb Ground Chicken
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 6 Small Flour Tortillas
  • 2 cups Cole Slaw Mix
  • 2 tbsp Lemon Basil Vinaigrette Dressing
  • 1/4 cup Hummus (homemade or store bought)
  • 1/4 Red Onion diced
  • 1 Roma Tomato diced
  • 1/4 Cucumber cubed
  • 1 Avocado sliced
  • 2 tbsp Feta Cheese

Instructions

  1. In a small bowl add coleslaw mix and dressing and toss. Set aside.
  2. Chop red onion, tomato, cucumber, and avocado. Set aside.
  3. In a medium size bowl, combine the raw ground chicken with the garlic powder, salt, and pepper. This works best if you use your hands.
  4. Then divide the ground chicken into 6 equal size balls.
  5. Pre-heat your pan over medium-high heat.
  6. Place each ball in the center of a tortilla. Cover with a piece of wax paper and smash the ground chicken down into a thin layer until it covers most of the tortilla. You can use a burger press if you have one but it definitely isn’t needed.
  7. Flip the tortilla over onto the griddle meat side down. Cook for 3 minutes then flip so the bare tortilla is on the pan. Cook for another 1-2 minutes until the tortilla is toasty.
  8. Transfer the tortilla with the cooked chicken to a plate or taco stand.
  9. Add a spoonful of hummus to the bottom of the taco and spread from end to end.
  10. Place a handful of slaw on top of the hummus.
  11. Add the red onion, tomato, cucumber, and avocado to the top of the slaw.
  12. Top with a sprinkle of feta cheese.

Notes

The number of tacos will vary slightly depending on the size of your tortillas and how full you stuff them, but I usually end up with six good size tacos.

Storage

Leftover smash chicken tacos can be stored in an airtight container in the fridge for up to 3 days. Leftovers stay freshest if the tacos are not topped and the toppings are stored separately.
