What is Crazy Feta Dip?

To answer this question I first need to tell you about CAVA in case you have never been to one. CAVA is a Mediterranean fast-casual chain that specializes in rice and salad bowls. Imagine a Qdoba but with Mediterranean food.

Among a number of add-on dips is their notorious crazy feta dip. It is a highly popular go to menu item that is also featured in many of their signature grain bowls. This spicy feta dip is often served with pita slices as an appetizer item or on warm pita wraps as an entree item.

Ingredients

This simple recipe makes the best dip and it is so easy to make. I will break down what I use and why and what ingredients will give you the best results.

A bottle of olive oil, a container of feta crumbles, jars of black pepper and onion powder, a garlic bulb, two green jalapeno peppers, and a lemon are arranged on a countertop with a striped towel in the background.

Feta Cheese – The base in this dip is feta cheese. I used crumbled feta cheese in this recipe because I buy it in bulk at Costco, but you could also use block feta. This can be found in the grocery store in the cheese section or sometimes near the deli.

Jalapenos – This dip is spicy which comes from the jalapenos. If you are not into spicy food, this dip is probably not for you. But you can definitely increase or decrease the spice level by removing the seeds or leaving them in when using fresh jalapenos. If you leave the seeds in it will be a lot spicier. I usually remove the seeds from one jalapeno and leave the seeds in from another. I find this to be a medium level of heat, But you should always taste your jalapenos first as the spice level can vary depending on how long they were on the vine.

Garlic – When I cook I almost always use jarred garlic, because it is easy and it keeps for a long time in the fridge. Feel free to use real garlic cloves or roasted garlic.

Lemon Juice – To balance out the dip and add some acidity to the salty feta cheese I added a little fresh lemon juice.

Olive Oil – I used a splash of olive oil to thin out the feta dip. A good substitute would avocado oil because of its neutral flavor.

Onion Powder – When I make dips I find that dried seasonings can provide a bit more flavor so I used onion powder here rather than fresh onion. But you could also make this with red onions or a sweet onion.

Black Pepper – For a little bit of extra seasoning.

Dippers – I used sea salt pita chips, but feel free to use pita bread, crackers, or fresh veggies.

Mixing the Dip

The best way to make this is to toss it all into a food processor and let it do the hard work for you. For an extra pretty presentation, top with small pieces of red onion, sliced fresh jalapenos, and crumbled feta.
