Why I love this recipe
This simple recipe brings a refreshing twist with unique ingredients to an old classic. With tart lemon and sweet blueberries complimenting the mild yet creamy ricotta cheese all a top crusty bread that brings a nice crunch. Honestly, it’s amazing that only a handful of ingredients can create such a powerful flavor with very minimal cooking required.
Blueberry Lemon Bruschetta Ingredients
This easy bruschetta hors d’oeuvre recipe is an explosion of flavor but uses only five ingredients! I have tested different ingredients so I will give you my notes and helpful tips based on what gives me the best results.
Ricotta – Ricotta cheese is the base ingredient for the bruschetta topping. It is a very mild and creamy cheese that takes on other flavors really well. Since ricotta is considered a young cheese and has a high water content, it’s perfect for making spreads. I used an inexpensive packaged ricotta cheese, but you can also use fresh ricotta if you have it.
Bruschetta Toasts – For this recipe I make my own toasts out of French bread. It’s super easy and only takes 15 minutes. This is also the most cost effective method. But feel free to use store bought bruschetta toasts if you like. Just make sure you get plain toasts as some are pre-flavored.
Fresh Lemon – Lemon is a key ingredient in this bruschetta recipe. It adds a ton of freshness and brightness to the ricotta. This recipe uses the zest and the juice. Do not skip the zest because most of the flavor in lemons is actually in the skin and you will not have the same results with just the juice.
Fresh Blueberries – I also added fresh blueberries to my recipe for extra fruit flavor, garnish, and sweetness. Lemons and blueberries pair well together and balance each other out. You want to make sure your blueberries are not wet when you top the toasts or they will make them soggy. For this reason I do not recommend using frozen blueberries.
Honey – A simple drizzle of honey really adds a lot to these bruschetta toasts. You can use regular honey or Mike’s hot honey. I have used both with success although I prefer regular honey here. Typically I am all about the hint of spice, but these really don’t need it in my opinion.
Garnish – If you are looking for a pretty presentation, garnish with fresh basil or mint.

A simple combination of a crunchy crostini, creamy ricotta cheese, tart lemon, sweet blueberry, and a drizzle of honey make this simply refreshing appetizer an explosion of flavor in a handheld bite. These are perfect for your next party, Easter brunch, summer pool party, wine and cheese night, or simply as a snack. Once you take a bite, you will be coming back for more!
Ingredients
- 1/2 French Bread Loaf
- 2 tbsp Olive Oil
- 1/2 cup Ricotta Cheese
- 1 Lemon zest of
- 1/2 Lemon juice from
- 1 cup Fresh Blueberries
- Drizzle of Honey
Instructions
- Preheat the oven to 350 degrees and prepare a baking sheet with a baking mat, parchment paper, or aluminum foil.
- Using a bread knife, slice the French baguette into slices about 1/4 inch thick. If the slices are too thin they will fall apart and too thick slices will be too much bread.
- Place the baguette slices onto the baking sheet and either brush them with olive oil or spray them with a Misto sprayer.
- Bake for 10-12 minutes until they are toasted and a little crunchy.
- While the bread bakes, mix together the ricotta, lemon zest, and lemon juice in a small bowl.
- Wash the blueberries and dry thoroughly. Set aside.
- Using the second half of the lemon, cut it into round slices (not quarters) and then slice each round into quarters. Set aside.
- Once the bread is baked and cooled for a few minutes, use a spoon to smear about a half a tablespoon of the ricotta mixture onto each slice of bread.
- Top with a few blueberries and a slice of lemon.
- Drizzle with honey and serve.
Notes
- Make sure to zest the lemon BEFORE you slice it. Once it is sliced it becomes very difficult to zest.
- Note, these will get soggy as they sit. I do not recommend making these ahead of time. If you are running short on time, the bruschetta toasts and ricotta mixture can be made ahead of time but do not assemble until ready to serve.
