Cheesy Sausage Egg Breakfast Smash Burger Tacos
The ultimate breakfast smash burger tacos that aren’t just for breakfast! This mashup loads crispy sausage patties, melted cheese, and fluffy scrambled eggs into street taco tortillas that actually hold together. For those moments when you can’t decide between breakfast food, tacos, or smash burgers. This magical combination doesn’t make you choose! It’s the kind of meal that makes you forget it’s only Tuesday and the best thing is it works as a filling breakfast taco or as breakfast for dinner! The whole thing comes together in 30 minutes, requires zero specialty equipment beyond a spatula, and tastes like you just waited in line at a trendy food truck. Full recipe card below!

What are Smash Burger Tacos?
If you haven’t seen the viral trend yet, let me explain. Smashed tacos started last year with a TikTok – make video. A creator combined the smash burger with a tortilla and and created taco burgers!
Essentially a smash taco takes the taco meat, usually ground beef, and smashes it on a flour tortilla. The taco is then cooked with the meat side down. Once the meat is cooked, you fold it like a taco and fill it up with your favorite toppings, hot sauce, or burger sauce.
I was heavily inspired by this smashed taco recipe idea but decided to add a twist. Rather than using typical beef patties I decided to try a breakfast version using sausage, eggs, and cheese.
Smash Burger Tacos Ingredients
These simple breakfast tacos are the perfect recipe for brunch or a quick dinner on a busy weeknight. Here are my notes on the ingredients that will give you the best results.
- Sausage Patties – This is your star. The easiest method is to use breakfast sausage patties. They are the perfect size and save you the hassle of portioning them out. Just make sure to use raw sausage and not precooked patties. You can also use ground hot Italian sausage or sweet Italian sausage and make your own patties. For maximum flavor stay away from the low fat versions as they will dry out and add zero taste.
- Tortillas – I usually use street taco size small flour tortillas. They hold up much better than corn tortillas and the street taco size is just perfect for the amount of toppings and sausage patties.
- Eggs – Would it be breakfast without eggs? I usually scramble my eggs for this dish but you could also make it with a fried egg or a soft-boiled egg. When using a sunny side up egg you also get a second sauce from the runny egg yolk.
- Shredded Cheese – Cheddar melts fast and has a sharp, salty flavor that cuts through the richness of the sausage and eggs. A Mexican blend (cheddar, Monterey Jack, queso quesadilla) adds a creamier melt. Pre-shredded is fine here, but if you shred your own, it melts smoother because it isn’t coated in cornstarch. I use this cheese grater attachment when I shred my own.
- Onion – I chose to use a white onion here but a red or yellow onion also works.
- Jalapeno Pepper – Jalapenos are optional but they add just a little kick of spice that gives this breakfast taco some heat. If you want more spice, leave the seeds and ribs in. If you want it milder, scrape them out. You can swap in poblanos for a smokier, gentler heat, or serrano peppers if you want to crank it up. You can also use red or green bell peppers for a no spice option.
- Cilantro – Fresh chopped cilantro adds a little herbaceous fresh flavor to the tacos. Real cilantro is the only way to go here. Dried cilantro tastes nothing like real cilantro and should always be avoided.
- Avocado – Avocado is one of my favorite taco toppings and I love adding avocado slices for a bit of fresh creamy texture.
- Feta Cheese Crumbles – This is totally optional but it adds a punch of saltiness to the top that balances the taco out. You can skip it or use your favorite cheese instead.
- Hot Sauce – Feel free to add hot sauce or any of your favorite sauces. My spicy ketchup mayo goes great here! And for a store bought option a sriracha drizzle or Cholula chili garlic are great choices!
Cooking Method
The best way to make these is on the stovetop on a griddle pan or on a flattop grill pan. If you do not have one you can also make them in a large skillet or cast iron skillet but it may take longer if you cannot fit more than one or two at a time. I can make four street taco size at a time on my griddle pan or all at once on the flattop grill insert outside.

Description
Thin smashed sausage patties with caramelized edges meet scrambled eggs and melted cheese in a handheld format that beats any drive thru breakfast sandwich. These breakfast smash burger tacos combine breakfast food, smash burgers, and tacos into one irresistible meal that is not just for breakfast. A breakfast worth waking up for or an easy weeknight dinner. Trust me, you will make them on repeat!
Ingredients
- 8 Uncooked Sausage Patties
- 1 tbsp Unsalted Butter
- 2 tbsp Milk
- 4 Eggs scrambled
- 1/2 cup Shredded Cheese
- 1/4 Onion diced
- 1 Jalapeno diced
- 1 tbsp Cilantro chopped
- 1 Avocado sliced
- 8 Street Taco Flour Tortillas
- 3 tbsp Feta Cheese Crumbles
Instructions
- Heat a small nonstick skillet over medium heat on the stove top. I use my smallest one which is an 8 inch pan.
- Crack four eggs into a small bowl being careful not to get any shells in the bowl and whisk vigorously.
- Add milk and whisk again with the eggs until the mixture is fully combined.
- Melt one tablespoon of butter or margarine in the skillet and coat the pan with it.
- Pour the whisked eggs mixture into the center of the pan and reduce to medium heat. Allow the eggs to spread out to the edge of the pan.
- Allow the eggs to cook for a few seconds before you move them around the pan with a silicone spatula. You will want to sir them every 30 seconds or so to break up the single layer into fluffy chunks of egg.
- Cook for 3 minutes and set aside.
- Then place one sausage patty (or sausage ball if using ground sausage) in the center of each tortilla.
- Pre-heat your pan over medium-high heat and spray with cooking spray.
- Using your hands with food safe gloves or a piece of wax paper, smash the sausage down into a thin patty until it almost touches the edges of the tortilla. You can also use a burger press if you have one but it definitely isn’t needed.
- Flip the tortilla onto the hot griddle meat side down. Cook for 4-5 minutes then flip so the tortilla side is on the pan.
- Reduce the heat to low and sprinkle with shredded cheese. Cook for another 1-2 minutes until the tortilla is toasty and cheese is melty. *Pro tip, for faster cheese melt, cover the griddle pan with a baking sheet. If using a skillet, use a lid.
- While the tacos cook, chop the onion, jalapeno, cilantro and avocado.
- Transfer the tortilla with the cooked sausage to a plate or taco stand.
- Add a spoonful of scrambled eggs and a sprinkle of onion, jalapeno, and cilantro to the bottom of the taco. To speed up the chopping process I use this slicer.
- Top with avocado slices and a sprinkle of feta cheese.
- Drizzle with your favorite hot sauce.

Storage
These tacos are best eaten fresh, but life happens and sometimes you have leftovers. Store leftover sausage smash tacos disassembled in the fridge for up to 3 days in an airtight container.
When to Make Breakfast Smash Tacos
These tacos are one of those rare recipes that taste like you put in way more effort than you actually did. This makes them the perfect taco recipe for a brunch spread, Tuesday mornings, or even a simple weeknight meal when you are craving breakfast for dinner! And if I am being honest, I have never even made them for breakfast, only dinner, haha!
