Description
Thin smashed sausage patties with caramelized edges meet scrambled eggs and melted cheese in a handheld format that beats any drive thru breakfast sandwich. These breakfast smash burger tacos combine breakfast food, smash burgers, and tacos into one irresistible meal that is not just for breakfast. A breakfast worth waking up for or an easy weeknight dinner. Trust me, you will make them on repeat!
Ingredients
- 8 Uncooked Sausage Patties
- 1 tbsp Unsalted Butter
- 2 tbsp Milk
- 4 Eggs scrambled
- 1/2 cup Shredded Cheese
- 1/4 Onion diced
- 1 Jalapeno diced
- 1 tbsp Cilantro chopped
- 1 Avocado sliced
- 8 Street Taco Flour Tortillas
- 3 tbsp Feta Cheese Crumbles
Instructions
- Heat a small nonstick skillet over medium heat on the stove top. I use my smallest one which is an 8 inch pan.
- Crack four eggs into a small bowl being careful not to get any shells in the bowl and whisk vigorously.
- Add milk and whisk again with the eggs until the mixture is fully combined.
- Melt one tablespoon of butter or margarine in the skillet and coat the pan with it.
- Pour the whisked eggs mixture into the center of the pan and reduce to medium heat. Allow the eggs to spread out to the edge of the pan.
- Allow the eggs to cook for a few seconds before you move them around the pan with a silicone spatula. You will want to sir them every 30 seconds or so to break up the single layer into fluffy chunks of egg.
- Cook for 3 minutes and set aside.
- Then place one sausage patty (or sausage ball if using ground sausage) in the center of each tortilla.
- Pre-heat your pan over medium-high heat and spray with cooking spray.
- Using your hands with food safe gloves or a piece of wax paper, smash the sausage down into a thin patty until it almost touches the edges of the tortilla. You can also use a burger press if you have one but it definitely isn’t needed.
- Flip the tortilla onto the hot griddle meat side down. Cook for 4-5 minutes then flip so the tortilla side is on the pan.
- Reduce the heat to low and sprinkle with shredded cheese. Cook for another 1-2 minutes until the tortilla is toasty and cheese is melty. *Pro tip, for faster cheese melt, cover the griddle pan with a baking sheet. If using a skillet, use a lid.
- While the tacos cook, chop the onion, jalapeno, cilantro and avocado.
- Transfer the tortilla with the cooked sausage to a plate or taco stand.
- Add a spoonful of scrambled eggs and a sprinkle of onion, jalapeno, and cilantro to the bottom of the taco. To speed up the chopping process I use this slicer.
- Top with avocado slices and a sprinkle of feta cheese.
- Drizzle with your favorite hot sauce.

Notes
The number of tacos will vary slightly depending on the size of your tortillas and how full you stuff them, but I usually end up with 8 full street tacos.
