What is Breakfast Pizza Flatbread?
You know I love pizza. So why not combine my favorite food with the best meal of the day? Breakfast.
Breakfast pizza flat bread is a take on a square sheet pan pizza using store bought dough and ordinary breakfast ingredients as the pizza toppings. Using my favorite pizza crust hack, this is truly the easiest way to make a pizza. Bonus, breakfast food like eggs, bacon, and cheese make excellent pizza toppings. And a little salsa makes the perfect base for a pizza.
Breakfast Pizza Ingredients
This easy breakfast flatbread uses basic ingredients and fresh toppings to make a tasty and filling morning meal. I will share what I used and where you can make substitutions or additions.
Crescent Roll Dough – Crescent roll dough is just like a can of crescent rolls only it comes in a full sheet without the perforated lines and it is the size of a sheet pan. Crescent dough bakes up to a nice golden brown color with a soft and flaky crust making it a great option for a flatbread. It is sold at the grocery store right next to the original tube of crescent rolls. If you cannot find crescent roll sheets you can use the regular crescent roll package. You will just need to pinch all the seams together to make sure your pizza crust bakes evenly. You can also use store-bought pizza dough, homemade pizza dough, or naan flatbread.
Eggs – One of the main components of this pizza flatbread is scrambled eggs. I used my own recipe here, but feel free to scramble your eggs how you like. I use regular store bought cage free eggs but you can use brown eggs or even fresh eggs if you have your own chickens. If you are on a medically restrictive diet you can also use egg whites for your scrambled eggs. If you prefer a runny yolk, you can also make your eggs sunny side up.
Bacon – Who doesn’t love some crispy bacon! My favorite store bought bacon is the maple flavor. It adds a level of sweetness to the saltiness and it makes the whole house smell like pancakes! But feel free to use whatever brand or flavor you want. You can also use turkey bacon or even breakfast sausage.
Cheddar Cheese – I used sharp yellow cheddar that I shredded from a block with this cheese grater attachment. I prefer to shred my own cheese because I think it tastes better and melts better, but you can also use pre-shredded cheese if you prefer. Most kinds of cheese would be good here but Pepper Jack, gruyere cheese, or goat cheese would be my second choices based on their more unique flavors.
Salsa – All pizza needs a sauce and since salsa and pizza sauce both use tomatoes as their base, it seemed like the natural choice here. The acidity in the salsa gives the pizza the extra flavor it needs. I used a roasted red salsa, but you could also use a salsa verde if you prefer.
Onion – I chose to use a white onion for the sharper flavor. A red onion would also work really well since they are best when used raw. You can also use a yellow onion or a sweet Vidalia onion if you would like.
Jalapenos – Like always, I like to add a little heat. If you do not like spicy food feel free to use green bell peppers instead or skip all together. You can also modify the spice level by removing the seeds or leaving them in when using fresh jalapenos. If you leave the seeds in it will be a lot spicier. I usually remove the seeds.
Pro TIP: Jalapenos tend to be spicier the longer they remain on the plant and if they are on the vine long enough they will start to change colors from green to an orangey color to a red. They will also start to get little striations on them which also indicate they will be spicier.Â
Avocado – This is totally optional, but avocado is one of my favorite toppings. I could probably put avocado on just about anything, haha! But the avocado adds a bit of creaminess to the top of the flatbread.
Cilantro – I chopped a little bit of cilantro for my flatbread to add a bit of freshness. If you don’t have fresh cilantro I would probably just skip it because in my opinion dried cilantro tastes nothing like real cilantro and should be avoided.
Additions – Feel free to add extra ingredients like a sweet red pepper, fresh tomatoes, green onions, or other fresh vegetables if you would like.

Ingredients
- 1 can Crescent Roll Sheet Dough
- 4 Pieces Cooked Bacon
- 4 Eggs Scrambled
- 1/4 cup Salsa
- 1/8 cup White Onion diced
- 1 Jalapeno diced with seeds removed
- 1 Avocado sliced
- 1/2 cup Shredded Cheddar Cheese
- 1 tbsp Cilantro chopped
Instructions
- In a pre-heated oven at 425°F, cook bacon on a foiled pan for 15-20 minutes or until desired crispiness.
- While the bacon cooks, heat a small non-stick frying pan over medium heat on the stove top and scramble eggs.
- When bacon is done cooking, remove from the oven and turn the temperature down to 350°F. Once the bacon is cool, break it up into smaller pieces.
- Spray a baking sheet with non-stick cooking spray.
- Unroll crescent roll dough onto cookie sheet and bake for 5 minutes or until dough is slightly cooked. You are only partially cooking the dough here. It will get cooked more later.
- While the dough cooks in the oven, chop the onion, jalapeno, cilantro, and slice avocado, and set aside.Â
- When the dough is partially cooked, top with salsa, scrambled eggs, onion, bacon, avocado, cheese, and cilantro.
- Place flatbread back in the oven and cook at 350°F for an additional 6-8 minutes or until crust is golden brown and cheese is melty.
Notes
Note: If you cook your bacon in the oven like I did you will need to lower the temperature down to 350 before you cook the flatbread.

Storage
Leftover pizza can be stored in the fridge in an airtight container for up to 3 days. As the pizza sits the crust does become soggy so it is best to consume as soon as possible.

The obvious answer is to make this delicious flatbread for breakfast or brunch, but I think you can make it anytime you want! I am a huge fan of breakfast for dinner and this pairs really well with air fryer tater tots. Easy recipes like this can be made for any meal. I often make scrambled eggs when I am hungry because they are quick and very filling, but why not take them to the next level with bacon, avocado, and melty cheese, and throw them on a pizza? No matter when you make it, this easy flatbread pizza will quickly become a household staple!
