Description
Take your taco night to the next level with these viral Mediterranean smash tacos! They are full of fresh toppings, creamy hummus, ground chicken, and feta cheese. They are the perfect way to spice up your weeknight dinner game and are ready in 25 minutes! With crispy edges and a center bursting with Mediterranean flavors, these are a filling meal that is hard to resist. This easy and quick dinner will quickly become your go to taco Tuesday recipe the whole family will love.
Ingredients
- 1 lb Ground Chicken
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 6 Small Flour Tortillas
- 2 cups Cole Slaw Mix
- 2 tbsp Lemon Basil Vinaigrette Dressing
- 1/4 cup Hummus (homemade or store bought)
- 1/4 Red Onion diced
- 1 Roma Tomato diced
- 1/4 Cucumber cubed
- 1 Avocado sliced
- 2 tbsp Feta Cheese
Instructions
- In a small bowl add coleslaw mix and dressing and toss. Set aside.
- Chop red onion, tomato, cucumber, and avocado. Set aside.
- In a medium size bowl, combine the raw ground chicken with the garlic powder, salt, and pepper. This works best if you use your hands.
- Then divide the ground chicken into 6 equal size balls.
- Pre-heat your pan over medium-high heat.
- Place each ball in the center of a tortilla. Cover with a piece of wax paper and smash the ground chicken down into a thin layer until it covers most of the tortilla. You can use a burger press if you have one but it definitely isn’t needed.
- Flip the tortilla over onto the griddle meat side down. Cook for 3 minutes then flip so the bare tortilla is on the pan. Cook for another 1-2 minutes until the tortilla is toasty.
- Transfer the tortilla with the cooked chicken to a plate or taco stand.
- Add a spoonful of hummus to the bottom of the taco and spread from end to end.
- Place a handful of slaw on top of the hummus.
- Add the red onion, tomato, cucumber, and avocado to the top of the slaw.
- Top with a sprinkle of feta cheese.
Notes
The number of tacos will vary slightly depending on the size of your tortillas and how full you stuff them, but I usually end up with six good size tacos.
