This recipes combines simple pantry staples with Asian flavors and can be made in just 10 minutes! I make this recipe at least once a week and is the perfect quick and easy meal for lunch or dinner. And unlike traditional ramen recipes, this brothless ramen dish also works well during the summer months when eating warm soup is not appetizing.
Brothless Ramen Ingredients
This easy teriyaki ramen bowl only requires a few simple ingredients and steps to make. You may even have these items on hand. Let me walk you through what I use and what ingredients will give you the best results.
Ramen Noodles – I always use the Maruchan ramen blocks. These instant ramen noodles cook in just three minutes on the stove and cost less than $0.50 a piece. I use these in a variety of dishes I make including with my homemade curry sauce! The type of ramen you choose is up to you but if you use a different dry-style noodle the cooking time may vary.
Eggs – The protein in this recipe comes from the egg. I usually scramble my eggs for this dish but you could also make it with a fried egg, poached egg, or a soft-boiled egg. When using a sunny side up egg you also get a second sauce from the runny egg yolk.
Milk – For this recipe I use 2% milk in the scrambled eggs. Adding milk makes fluffy eggs assuming you do not overcook them.
Teriyaki Sauce – You can buy teriyaki sauce at your local grocery store in the international foods aisle but I always make my homemade sauce recipe since I regularly stock teriyaki sauce ingredients and it could not be easier to make. Not to mention the bottled teriyaki sauce usually has a lot of extra sodium and processed ingredients. My recipe is a simple combination of low sodium soy sauce, brown sugar, and garlic.
Red Pepper Flakes – I like spicy food a lot and tend to add chili flakes or hot sauce to most of my savory dishes. This is totally an optional ingredient, but it gives the dish a little heat if you are into that. If you like milder heat, I also love this chili onion seasoning on my eggs! You could also use a little chili oil if you prefer.
Green Onions – Green onions pair really well with Asian style cuisine, add a lot of flavor, and are best served raw. All that makes them the perfect topping for broth-less ramen.
Sriracha Mayo – This is totally optional but makes the ramen so good! If you have never had Sriracha mayo its essentially spicy mayonnaise. It has the same tangy taste as regular mayo with a little bit of a spicy kick. If you do not have the store bought version, you can easily make a homemade spicy mayo which I have done many times. All you need is mayonnaise and sriracha.
Additional Toppings – I make this dish ALL the time and have added a variety of toppings to it depending on what I have on hand and how much time I have. I have incorporated broccoli, sesame seeds, diced bell peppers, carrots, and even peas. So feel free to add your toppings of choice here.
Cooking Method
While technically you can make ramen noodles in the microwave, I always make mine on the stove top because it is faster, especially if you have a gas stove. Ramen noodles only take 3 minutes to make in boiling water.

Description

This vegetarian dish combines simple Asian flavors with a sweet and spicy teriyaki sauce and soup-less ramen noodles for a craveable take on an old classic. Ingredients
- 4 Eggs
- 1 tbsp Unsalted Butter
- 2 tbsp Milk
- 2 pkgs Ramen Noodles
- 1/4 cup Soy Sauce
- 1/4 cup Brown Sugar
- 1 tsp Garlic minced
- 1 tsp Red Pepper Flakes
- 4 Green Onions chopped for garnish
- 3 tbsp Mayo
- 1 tsp Sriracha
- 1/2 tsp water
Instructions
- In a small sauce pot bring about 2 cups of water to a boil.
- Once the water is boiling, add the blocks of ramen noodles and cook for 3 minutes and drain all the water.
- While the water boils, heat a small nonstick skillet over medium heat on the stove top. I use my smallest one which is an 8 inch pan.
- Crack four eggs into a small bowl being careful not to get any shells in the bowl.
- Add milk and whisk with the eggs until the mixture is fully combined.
- Melt one tablespoon of butter or margarine in the skillet and coat the pan with it.
- Pour the whisked eggs mixture into the center of the pan and reduce to medium low heat. Allow the eggs to spread out to the edge of the pan.
- Allow the eggs to cook for a few seconds before you move them around the pan with a silicone spatula. You will want to sir them every 30 seconds or so to break up the single layer into fluffy chunks of egg.
- Cook for 3-5 minutes without increasing the heat. If the heat is too high the eggs will become rubbery. For a wetter egg or a soft scramble, cook for closer to 3 minutes.
- Once the eggs and the ramen are cooked, stir together 1/4 cup brown sugar, 1/4 cup soy sauce, and 1 tsp minced garlic in the pot and heat on low heat until the brown sugar melts into the soy sauce, about 1 minute.
- Mix the cooked ramen into the teriyaki sauce and add 1 teaspoon of red pepper flakes.
- Dish the ramen onto a plate and add the scrambled eggs and green onions to the top of the noodles.
- (Optional) Mix mayo, sriracha, and water together in a small bowl or ramekin until drizzling consistency. Drizzle on top of ramen and egg.
