Spicy Cajun Chicken Alfredo Pizza with Homemade Crust

If you love pizza as much as I do and aren’t afraid to eat outside the pizza box, this Cajun pizza recipe is for you! Creamy homemade Cajun sauce tops this spicy chicken pizza with fresh homemade pizza dough. Add in your favorite bell peppers, onions, and some parmesan cheese and you are ready for pizza night! Spicy Cajun Chicken Alfredo Fancy Pizza

You know the drill. My food POV is almost everything has the potential to become a pizza and fancy pizza is one of my favorite things to create but is often misunderstood. Fancy pizza isn’t really fancy. It is simply non-traditional pizza combinations that usually include ingredients outside of the stereotypical pepperoni, sausage, and red tomato sauce. But if you think about it, most dishes contain some element of bread or carbs, so why would it be weird to deconstruct it and add them to the top of a pizza? Food for thought, huh?

Cajun Pizza Ingredients

Most pizza recipes have a few basic ingredients that are consistent across the board but this unique combo takes pizza making to the next level with Cajun flavors! I will break down what I use and why.

Pizza Dough – I almost always make fresh homemade pizza dough. Ever since we got a pizza oven a few years ago, I have been a sucker for homemade pizza crusts. Simply put, it just tastes better. If you have never made your own dough, don’t worry. It’s much easier than you think!

If you decide to make your own pizza crust, this is my favorite pizza dough recipe if you can plan 24 hours in advance. If you don’t have that much time, this is the best pizza dough for beginners and has a short rise time. If you are a fan of thin crusts my St. Louis style dough is quick, doesn’t require yeast, and can be made on a pizza stone. But if you need a quick fix, this is one of my favorite ways to make a fast pizza flatbread with a baking sheet.

Pizza Sauce – Because this is a unique pizza combo, and the creamy Cajun flavor is key, I skipped the tomato sauce and used my homemade Cajun sauce for this specialty pie. This is an easy recipe and uses a few basic pantry staples and my homemade Cajun seasoning for the best alfredo like sauce.

Chicken – I actually use chicken on a lot of my pizzas and I think the most efficient option is to either use canned chicken or pressure cook a chicken breast. Did you know you can toss a frozen chicken breast in the Instant Pot and it will be done in 20 min? True story. In both cases I shred the chicken with a fork once it’s cooked. You can also use leftover rotisserie chicken or cube the chicken into small pieces if you want.

You could also add Cajun style andouille sausage for an additional creole flavor or substitute it for the chicken.

Onion – I chose to use a white onion here but a red or yellow onion would also work just fine. You can also top the pizza with green onions if you want.

Cheese – You can use what ever type of cheese you would like here, but I recommend a blend of mozzarella and parmesan cheese to let the Cajun flavors shine through. Mozzarella is a good melting cheese with a mild flavor that won’t overpower the other ingredients and the parmesan will give it a little sharper taste.

If making your pizza in a high heat pizza oven, I recommend shredding your own cheese. When cooking at high heat shredding real cheese is better because the melting point of bagged cheese is different since they coat it in cornstarch during packaging. If you have a stand mixer you can use this cheese grater attachment to shred your cheese in seconds!

Fresh Vegetables – I kept this pizza simple, with just onion, cheese, chicken, and sauce but you can add whatever fresh veggies you would like. Green bell pepper, red bell pepper, corn, or tomatoes would all be great additions.

Pro Tip: To speed up the chopping process on veggies and onions, I use this slicer. It is truly a game changer when it comes to prep work!

Baking Methods

There are multiple options for cooking pizza. I have made this pizza combo both in my pizza oven as well as in my regular oven in a 12 inch cast iron skillet. Because pizza ovens cook at higher temperatures, I do not recommend using my skillet dough or store bought dough in a pizza oven but you can make either dough in your regular oven on a baking sheet, pizza pan, or pizza stone.

Creamy homemade Cajun sauce and onions top this spicy chicken pizza with fresh homemade pizza dough. Sprinkle with mozzarella and parmesan cheese and you are ready for pizza night! This unique creole pizza combination and creamy Cajun sauce will make you think you are dining at your favorite pizza joint!


Ingredients

Cajun Seasoning 
  • 1/2 tbsp Black Pepper
  • 1/2 tbsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Thyme Leaves
  • 1/4 tsp Salt
Cajun Sauce
  • 1 tbsp Unsalted Butter
  • 1 tbsp Flour
  • 1/2 tbsp Cajun Seasoning
  • Salt to taste (a few shakes)
  • 1/2 cup Milk
  • 1/8 cup Parmesan Cheese
  • 1-2 tbsp Water (if needed)
Cajun Pizza 
  • Pizza Dough (homemade or pre-made dough)
  • 1 Cooked Chicken Breast shredded
  • 3/4 cup Cajun Sauce
  • 1/4 White Onion sliced
  • 3/4 cup Mozzarella Cheese
  • 1/4 cup Parmesan Cheese
  • Parsley or Green Onions for garnish

Instructions

Cajun Seasoning and Sauce Instructions

  1. In a small spice jar or mason jar, combine all the spices for the Cajun seasoning blend. Add a lid and shake to combine and set aside. Note: You will not use all of this so do not dump it all into the sauce. Save excess in a jar in the pantry for future use.
  2. In a large saucepan, melt 1 tablespoon of butter over medium-low heat.
  3. Once the butter is completely melted, reduce the heat and slowly mix in the flour stirring constantly. This should yield a smooth paste like texture. This is your roux.
  4. Then slowly whisk in 1/2 tbsp of the Cajun seasoning and the salt. This will create a thick red orange paste.
  5. Slowly pour in the milk stirring continuously. Increase the heat to medium still stirring until the buttery Cajun roux combines completely with the milk. About a minute or two. Make sure the roux is not sitting on the bottom of the saucepan or it will burn.
  6. Add the cheese a little at a time stirring until combined. Again make sure the cheese isn’t settling to the bottom and burning.
  7. Simmer on medium-low heat for about 5 minutes stirring occasionally. DO NOT allow the sauce to boil. The sauce will thicken as it cooks.
  8. Add a tablespoon of water at a time if the sauce needs thinning out until desired consistency is reached. Sauce should be a little thick for pizza.

Cajun Pizza Instructions

  1. Cook chicken and shred with a fork. (see notes above on options)
  2. Pre-heat oven according to pizza dough instructions.
  3. Slice onion and set aside.
  4. On a lightly floured surface, stretch out pizza dough into a circular shape.
  5. Spoon the Cajun sauce onto the top of the dough and use the back of the spoon to spread it evenly across the whole pizza leaving about an inch of dough exposed along the edges.
  6. Add onion slices, shredded chicken, mozzarella and parmesan cheese to the top of the pizza.
  7. Bake pizza in the preheated oven according to pizza dough instructions or until golden brown and cheese is melted.
  8. Top with parsley or green onions for garnish.

Notes

Note: This is enough ingredients to make three 10 inch pizzas. Cooking time will vary depending on what pizza dough you use. You may have some sauce leftover depending on your preferences.

Storage

In the event you have leftover pizza, you can store it in the fridge in an airtight container for up to 4 days. If you make one of my homemade doughs, use or freeze uncooked pizza dough within 3 days.

When to Make Cajun Pizza

Homemade pizzas and a glass of wine are always a good idea in my book! This is a great recipe for an easy summer dinner, a nod to Mardi Gras, or hits the spot as a Super Bowl appetizer. In my house every Friday night is pizza night so there are 52 opportunities a year to make this spicy pizza full of delicious flavors.
