Sauce Ingredients

Making your own homemade curry sauce is easier than you think! This spicy homemade sauce recipe is a painless recipe with simple ingredients that anyone can make. I make this sauce often and have experimented with different ingredients, so I will give you my notes and suggestions based on what gives me the best results.

A variety of ingredients on a kitchen counter, including curry powder, paprika, brown sugar, butter, a lime, sour cream, tomato paste, coconut milk, and several spice containers.

Tomato Paste – I use unsalted tomato paste in this sauce as a thickener. I have also used gochujang in a pinch and it does work, but adds to the heat level exponentially. Warning, not for the faint of heart.

Butter – I used plain unsalted butter to add a bit of richness to the sauce. I have not tested it with margarine.

Curry Seasoning – The key ingredient to this curry recipe is curry seasoning. It is readily available at the grocery store and mixing it with tomato paste gives a similar result to red curry paste. Curry seasoning has a notable warm, earthy, and aromatic taste.

Red Pepper Flakes – The spice in this sauce comes primarily from the red pepper. Note, I make this sauce fairly spicy, if you prefer a milder heat level, reduce the red pepper flakes by half.

Paprika – This spice adds the red color to the sauce and a little heat and flavor.

Dark Brown Sugar – This adds a bit of sweetness to the sauce to counter balance the spiciness. I have used both dark and light brown sugar but dark brown sugar is better.

Coconut Milk – I always use full-fat coconut milk which gives the sauce a rich and silky texture. I buy mine at Costco in bulk when it’s on sale.

Water – I add a splash of water when mixing this sauce to give it a slightly less thick consistency. If you prefer a thicker sauce you can skip it.

Sour Cream – This helps balance out the richness of the coconut and spiciness.

Lime Juice – A little acidity helps cut the richness of the sauce and brings some brightness to it. Use fresh lime juice if you can.

Description

This easy homemade creamy coconut curry sauce is a great way to bring spicy bold flavors to your white rice dishes! This simple homemade coconut curry sauce combines Indian recipes and Thai methods to create a simply irresistible sauce with tons of flavor! It is ready in 10 minutes and brings warm aromatic takeout flavors right to your kitchen. It’s the perfect curry sauce for easy dinner recipes.


Ingredients

  • 1 tbsp Unsalted Butter
  • 2 tbsp Tomato Paste no salt added
  • 1 tbsp Curry Powder
  • 1 tbsp Dark Brown Sugar
  • 1 tsp Paprika
  • 1 tsp Red Pepper Flakes
  • 1/2 tsp Salt
  • 1 cup Coconut Milk
  • 1/4 cup Water
  • 2 tbsp Sour Cream
  • 1/2 Lime juice from

Instructions

  1. In a medium saucepan, melt butter over medium low heat.
  2. Whisk in tomato paste and spices. This will be a lumpy thick paste.
  3. Slowly whisk in coconut milk and water and increase to medium heat. Whisk until tomato paste and spices are fully combined.
  4. Add sour cream and whisk until combined.
  5. Simmer on medium-low heat for about 5 minutes stirring occasionally. DO NOT allow the sauce to boil. The sauce will thicken as it cooks.
  6. Finish the sauce with the juice of half a lime and stir.
  7. Serve over rice, chicken, or even as a pizza base.

Notes

Note, this is a very spicy curry sauce. You can control the spice level by reducing the amount of red pepper flakes.

Storage

The best way to store leftover sauce is in the fridge in an airtight container for up to 5 days. I just got these glass storage containers and they are perfect!
