Homemade Spicy Caribbean Jerk Chicken Pizza Recipe

If you know me, you know that pizza is a food group in my book and coming up with new and unique pizza topping combinations is one of my life’s special talents. I truly believe almost everything has the potential to become a pizza, and this spicy Caribbean jerk chicken pizza is one of my absolute favorite combos yet! For this non-traditional Jamaican jerk chicken pizza I combined sweet and spicy flavors, fresh peppers, and red onion to keep you coming back for more. Caribbean Jerk Chicken Pizza

I know what you are thinking, does Caribbean cuisine really go with an Italian classic like pizza? And the answer is YES, it definitely does! If you think about a Caribbean jerk chicken sandwich, it uses the same ingredients, just in a different way. You are simply replacing the bun with the pizza crust. So really the question becomes, is a jerk chicken sandwich weird?

Ingredients

Most pizza recipes have a few basic ingredients that are the same across the board but this unique combo takes pizza making to the next level! I will break down what I use and why and give you a few alternatives.

Pizza Dough – I almost always make homemade pizza dough. Ever since we got a pizza oven a few years ago, I have been a sucker for homemade pizza crusts. Simply put, it just tastes better. If you have never made your own dough, don’t worry. It’s easier than you think!

If you decide to make your own pizza crust, this is my favorite pizza dough recipe if you can plan 24 hours in advance. If you don’t have that much time, this is the best pizza dough for beginners and has a short rise time. If you are craving delicious crispy pizza crust my St. Louis style dough is quick, doesn’t require yeast, and can be made on a pizza stone. But if you need a quick fix, this is one of my favorite ways to make a fast pizza flatbread with a baking sheet.

Pizza Sauce – Because this is a unique pizza combo, I didn’t think a traditional tomato sauce was appropriate. For this specialty pizza base I use my homemade Caribbean jerk sauce that uses simple pantry staple spices and achieves jerk seasoning flavors without a scotch bonnet pepper. This sweet and spicy sauce has bold flavors that really defines the pizza and only takes 10 minutes to whip up. You can also use a grocery store sauce if you would like.

Chicken – I actually use chicken on a lot of my pizzas and I think the most efficient option is to either use canned chicken or pressure cook one or two chicken breasts. Did you know you can toss a frozen chicken breast in the Instant Pot and it will be done in 20 min? True story. In both cases I shred the chicken with a fork once it’s cooked and toss it in the sauce before adding it to the pizza. You can also use leftover rotisserie chicken or cube the chicken into small pieces if you want.

Onion – I chose to use a red onion here but you can also use a white or a yellow onion. I also garnish with a green onion, but that is totally optional.

Cheese – You can use what ever type of cheese you would like here, but I recommend using a mild melting cheese like mozzarella or Colby jack so it doesn’t overpower the bold flavors of the Caribbean jerk sauce. I often use a blend of mozzarella and white cheddar for a little extra flavor.

If you are making your pizza in a high heat pizza oven, I recommend shredding your own cheese. When cooking at high heat shredding real cheese is better because the melting point of bagged cheese is different since they coat it in cornstarch during packaging. If you have a stand mixer you can use this cheese grater attachment to shred your cheese in seconds!

Fresh Vegetables – You can add whatever fresh veggies you would like, but I normally use red bell peppers and yellow peppers as they are commonly used in Caribbean cuisine. I always add my veggies to the pizza raw but you can also cook them first if you want.

Pro Tip: To speed up the chopping process on veggies and onions, I use this slicer. It is truly a game changer when it comes to prep work!

Spicy Caribbean jerk pizza is the ultimate combination of Italian Caribbean fusion that your taste buds will love! Ingredients

Caribbean Jerk Sauce
  • 2/3 cup Ketchup
  • 1 tbsp Low Sodium Soy Sauce
  • 5 tbsp Dark Brown Sugar
  • 2 Lime Wedges or 1/2 tbsp Lime Juice
  • 1 tbsp Thyme Leaves
  • 1 tsp Ground Ginger
  • 1/2 tsp Cayenne Pepper
  • 1/4 tsp Cinnamon
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Black Pepper
  • 1/8 tsp Ground Cloves
  • 1/8 tsp All Spice
  • 1/8 tsp Salt
Caribbean Jerk Pizza 
  • Pizza Dough (homemade or pre-made pizza dough)
  • 6 oz Chicken Breast cooked and shredded
  • 1/2 Red Onion sliced
  • 1/4 cup Yellow Bell Pepper diced
  • 1/4 cup Red Bell Pepper diced
  • 1 1/2 cup Cheese shredded
  • 3 Green Onions chopped (optional for garnish)

Instructions

Caribbean Jerk Sauce Instructions

  1. In a medium size bowl, whisk together all the ingredients until fully combined.
  2. Makes a little over a cup. You may have leftover sauce.
  3. Store in the fridge in an airtight container for up to 7 days.

Caribbean Jerk Pizza Instructions

  1. Pre-heat oven according to pizza dough instructions.
  2. Cook chicken and shred with a fork once cooked.
  3. In a small bowl toss cooked chicken with about 1/4 cup of the jerk sauce.
  4. Slice onions and chop the red and yellow pepper and set aside.
  5. On a lightly floured surface, stretch out pizza dough into a circular shape.
  6. Spoon the Caribbean jerk sauce onto the top of the dough and use the back of the spoon to spread it evenly across the whole thing leaving about an inch of dough exposed along the edges. I usually use 2-4 tablespoons per pizza.
  7. Add the coated chicken pieces to the top of the Caribbean jerk sauce.
  8. Add onion slices and peppers to the top of the pizza.
  9. Sprinkle shredded cheese on top. 
  10. Bake pizza in the preheated oven according to pizza dough instructions or until golden brown and cheese is melted.
  11. Top with additional green onion.

Notes

This is enough to make three 10 inch pizzas. Cooking time will vary based on what type of pizza dough you use and what type of oven you bake it in.

Storage

In the event you have leftover pizza, you can store it in the fridge in an airtight container for up to 4 days. If you make one of my homemade doughs, use or freeze uncooked dough within 3 days.

This is a great recipe when you are craving spicy chicken and pizza at the same time! It can make delicious pizza for warmer months on the patio or hit the spot on a chilly night in. We do pizza night every Friday and this spicy combo is in my regular rotation. This delicious pizza makes a fun evening dinner the whole family can participate in. No matter when you make it, this pizza recipe will become a family favorite.
