Spicy Asian Kung Pao Chicken Pizza

I know what you are thinking, does Italian pizza really go with spicy Asian flavors? And the answer is YES, it definitely does! If you think about how you normally eat kung pao chicken, with rice or noodles, you are simply replacing one carb for another and the only thing that changes is the pizza crust as the vessel. This pizza is full of great flavor! It is truly the best of spicy and savory all rolled into a fancy pizza combo you have to try.

Ingredients

Most pizza recipes have a few basic ingredients that are consistent across the board but this unique combo takes pizza making to a whole new level! I will break down what I use and why and give you a few alternatives.

A pizza topped with mozzarella, kung pao chicken, red bell peppers, peanuts, carrots, and green onion, sliced into eight pieces. Surrounding the pizza are lime wedges, whole peanuts in a bowl, colorful bell peppers, and fresh cilantro.

Pizza Dough – I almost always make homemade pizza dough. Ever since we got a pizza oven a few years ago, I have been a sucker for homemade pizza crusts. Simply put, it just tastes better. If you have never made pizza dough before, it can be a little nerve racking at first, but I promise it is very easy! There are only a few extra steps and most recipes only require basic baking ingredients.

If you decide to go the homemade route, this is my favorite pizza dough recipe but it does take about 24 hours to make. If you don’t have that much time, this is the best pizza dough for beginners, has a short rise time and can be made in a normal oven. But if you need a quick fix, this is one of my favorite ways to make a fast pizza flatbread with a cookie sheet.

Pizza Sauce – Because this is a unique pizza combo, I didn’t think a traditional red tomato sauce was appropriate. For this specialty pizza base I used my homemade kung pao sauce that uses simple Asian staples like soy sauce, sesame oil, and rice wine vinegar. This is a spicy sauce with a lot of bold flavors that really defines the pizza and only takes 10 minutes to whip up. You can also use a store bought sauce if you would like.

Chicken – I actually use chicken on a lot of my pizzas and I think the most efficient option is to either use canned chicken or pressure cook a chicken breast. Did you know you can toss a frozen chicken breast in the Instant Pot and it will be done in 20 min? True story. In both cases I shred the chicken with a fork once it’s cooked before adding it to the pizza. Either way the chicken needs to be cooked prior to using on your pizza. You can also use leftover rotisserie chicken or cube the chicken into small pieces if you want.

Four images show the progression of making kung pao chicken pizza. Top left: raw dough with sauce and toppings. Top right: dough with added shredded chicken. Bottom left: topped with cheese. Bottom right: baked, golden-brown pizza.

Onion – I chose to use a white onion and green onion here but you can also use a red or a yellow onion. But I definitely recommend sticking to green onion since it a traditional ingredient in Asian cuisine that really gives the pizza something extra.

Cheese – You can use what ever type of cheese you would like here, but I recommend using a milder cheese like mozzarella or pepper jack if you like a little extra heat. Both are a good mild melting cheese and don’t overpower the bold flavors of the kung pao sauce.

If making your pizza in a high heat pizza oven, I recommend shredding your own cheese. When cooking at high heat shredding real cheese is better because the melting point of bagged cheese is different since they coat it in cornstarch during packaging. If you have a stand mixer you can use this attachment to shred your cheese in seconds!

Fresh Vegetables – You can add whatever fresh veggies you would like, but I normally use red bell peppers and shredded carrots as they are commonly used in kung pao dishes. I always add my veggies to the pizza raw but you can stir fry them in a pan before putting them on the pizza too.

Pro Tip: To speed up the chopping process on veggies and onions, I use this slicer. It is truly a game changer when it comes to prep work!
