Hidden Valley Ranch Veggie Pizza with Crescent Rolls
Calling all pizza lovers! It’s no secret that pizza is a way of life in my house. And you know I believe almost everything has the potential to become a pizza. So today we are talking about one of my favorite ways to make a simple veggie pizza that doubles as a great appetizer, healthy snack, or a cold take on pizza. It doesn’t require a lot of time to make and it’s a great alternative method to homemade pizza crust when you are short on time. This tasty recipe combines everyone’s favorite original ranch, buttery crescent rolls, and crisp veggies to make a vegetable pizza everyone will love! What is Veggie Pizza?
Veggie pizza a non-traditional play on a classic pizza filled with lots of fresh veggies and served cold. Typically veggie pizza is made with baked crescent roll dough topped with ranch dressing mix and raw vegetables.
Veggie Pizza Ingredients
This easy veggie pizza only has a handful of simple ingredients and fresh toppings. The idea here is to make the pizza as colorful as possible. I will share what I used and where you can make substitutions or additions.
Crescent Roll Dough – Crescent roll dough is just like a can of crescent rolls only it comes in a full sheet without the perforated lines and it is the size of a sheet pan. Crescent dough bakes up to a nice golden brown color with a soft and flaky crust making a delicious pizza. It is sold at the grocery store right next to the original tube of crescent rolls, Grands biscuits, and cinnamon rolls. If you cannot find crescent roll sheets you can use the regular crescent roll package. You will just need to pinch all the seams together to make sure your pizza crust bakes evenly.
Sour Cream – The pizza sauce of this recipe is sour cream and ranch mix. I used the light version but you can use the full fat version if you want. While I have seen this made with a cream cheese mixture, I think using sour cream gives the pizza a lighter taste perfect for the summer. But you can definitely make a cream cheese spread as well. This option will be a bit thicker and more difficult to spread though.
Ranch Dressing Mix – If you know you know. These little ranch dips are so versatile! I used the Hidden Valley original ranch seasoning and salad dressing mix and dumped a whole packet into the bowl. You can find these ranch packets in the salad dressing aisle at most grocery stores.
Bell Peppers – I like to add a little bit of red and yellow bell peppers for added sweetness and color. The red and yellow bell peppers taste very similar and add a lot of flavor. I used mini peppers because I usually have them on hand but you can use full size peppers as well. To speed up the chopping process I use this slicer.
Carrots – To add some extra flavor and color I used some shredded carrots. I bought mine pre-shredded but you can use a whole carrot and shred it in a food processor too.
Broccoli – The King of veggies, you know, because of the crown, haha! I know, that was a terrible joke but no one ever said I was a comedian. Anyway, broccoli is a great addition for added color and nutrition. I chopped mine into small pieces and removed most of the stems.
Onion – I chose to use a white onion here for the sharper flavor. A red onion would also work really well here since they are best when used raw. You can also use a yellow onion or a sweet Vidalia onion if you would like.
Jalapenos – Like always, I like to add a little heat. If you do not like spicy food feel free to use green bell peppers instead or skip all together. You can also modify the spice level by removing the seeds or leaving them in when using fresh jalapenos. If you leave the seeds in it will be a lot spicier. I usually remove the seeds.
Pro TIP: Jalapenos tend to be spicier the longer they remain on the plant and if they are on the vine long enough they will start to change colors from green to an orangey color to a red. They will also start to get little striations on them which also indicates they will be spicier.Â
Cheddar Cheese – I used sharp yellow cheddar that I shredded from a block with this cheese grater attachment. I prefer to shred my own cheese because it tastes better, but you can also use pre-shredded cheese or a blend of cheese if you want.
Additions – Feel free to add any of your favorite veggies that I left out. Just remember, the toppings are served raw and only the crust is cooked. Tomatoes, green onions, and cauliflower are all great additions.

Description
Load up on your favorite veggies with this cold veggie pizza recipe perfect for summer BBQs and gatherings. This simple recipe only takes 20 minutes to make and is a great way to sneak a healthier option onto the buffet table. Using the original ranch and flaky crescent roll crust, this vegetarian pizza is full of flavor that everyone will love!
Ingredients
- 1 can Crescent Roll Sheet Dough
- 16 oz Sour Cream
- 1 pkg Hidden Valley Ranch Dressing Mix
- 1/4 cup Red or Yellow Bell Peppers
- 1/4 cup Carrots shredded
- 1/4 cup Broccoli chopped
- 1/4 cup Onion diced
- 2 Jalapenos diced with seeds removed
- 1/4 cup Shredded Cheese
Instructions
- Pre-heat oven to 350°F
- Spray a baking sheet with non-stick cooking spray.
- Unroll crescent roll dough onto cookie sheet and bake for 8-10 minutes and remove from oven. Cool for 5 minutes.
- While the dough cooks in the oven, chop all vegetables and set aside.Â
- In a small bowl mix the ranch packet with 16 oz of sour cream.
- On a cooled crust, use a spatula to spread the ranch mix onto the top of the crescent dough coating evenly up to the edges of the dough.
- Sprinkle the veggies and cheese evenly onto the pizza crust.
- Cut and serve cold.

Storage
Store leftover veggie pizza for up to 3 days in an airtight container. As the pizza sits the crust does become soggy so it is best to consume as soon as possible.
