Why You Will Love This Recipe
This recipe is what happens when you take the Italian technique and let simple ingredients shine. Less than ten ingredients and 25 minutes of time makes toasted bread worthy of holiday dinner party status. This recipe leans into bright flavors and textures amped up with creamy mozzarella and herbaceous pesto. It’s traditional enough to feel familiar but interesting enough to stand out. The result, a delicious recipe with fresh flavor and ingredients so good they barely need help.
Tomato Pesto Bruschetta Ingredients
This easy caprese style bruschetta appetizer leans into traditional Italian pairings. While it requires minimal cooking, some ingredients make or break the recipe. This is what gives me the best results.
- Bruschetta Toasts – The foundation of everything. You want crunchy bread with a tight, chewy crumb. French baguettes work best. Avoid soft sandwich bread or anything pre-sliced. For a nice crusty bread make your own toasts with French bread. Super easy and affordable. You can use store bought bruschetta toasts if you are short on time too.
- Garlic Powder – For topping the bread before baking. Just a light sprinkle to add extra garlicky flavor.
- Extra Virgin Olive Oil – Use extra virgin if you can. It’s going directly onto the bread, so flavor matters. You’ll brush or spray this onto the bread before toasting and it creates that golden, crispy surface that keeps everything from getting soggy. A good substitute would be avocado oil because of its neutral flavor, but butter works too.
- Pesto Sauce – Store-bought is a bit of a gamble because most rely heavily on oil and use very little basil. I like the Costco pesto but other than that I stick to homemade. Pesto adds fresh herbs, garlicky depth and ties the tomatoes and mozzarella together. My pesto recipe is insanely easy and contains no preservatives only fresh ingredients! And unlike classic basil pesto ingredients mine skips the pine nuts for a more affordable option. If you have a beautiful garden like mine, you may not even need to buy fresh basil. Mine showed off this year and I have been making homemade pesto on repeat.
- Fresh Mozzarella Cheese – The creamy, milky barrier between the pesto and the tomatoes. Use the kind packed in water, not the low-moisture stuff meant for pizza that comes in a block. Buy the kind that comes in a log. I get mine at Costco in a two pack. It’s great for charcuterie and homemade pizza. Pat it dry before using or it’ll add unwanted moisture. If you can’t find fresh mozzarella, you can use sliced block mozzarella in a pinch but it won’t be nearly as creamy.
- Fresh Tomatoes – Fresh juicy tomatoes are the only way to go. Cherry or Romas work best. Cherry tomatoes have more water but provide a prettier presentation. Roma tomatoes are great for getting a small dice. I used cherry tomatoes and cut them into eighths. From a flavor perspective, both work so the choice is yours.
- Balsamic Glaze – Whatever you do, don’t skip this one, it’s the star of the show. I know most people do not stock this in the pantry, but I promise this is 100% worth it and necessary. While balsamic vinegar is similar, it’s far too runny and will turn the bruschetta into a soggy mess. You can usually find this at your local grocery store in the vinegar aisle or near the salad dressings.
- Fresh Basil – For finishing. Torn basil adds a pop of color and a hit of fresh herbs. This is totally optional but has a big impact.
Preparation
First you make the bruschetta toasts. French bread is the key. Slice it, coat it with a little olive oil and garlic powder and bake it on a baking sheet.
Next slice the tomatoes, mozzarella, and make the pesto if you are using homemade. My fresh pesto recipe is quick and easy with a food processor or bullet blender. Then assemble and bake! It’s that easy.

Description
Turn basic bruschetta into your signature party appetizer. This easy basil pesto bruschetta recipe brings simple ingredients together and lets them shine. Toasted bread, bright tomatoes, fresh mozzarella, a swipe of classic basil pesto and a tangy balsamic glaze that ties everything together with almost zero effort. The perfect Italian classic that is much more memorable than traditional bruschetta.
Ingredients
- 1/2 French Bread Loaf sliced
- 2 tbsp Olive Oil
- 1/2 tsp Garlic Powder
- 3/4 cup Pesto Sauce (homemade or store bought)
- 12 pieces Fresh Mozzarella Cheese halved
- 15 Cherry Tomatoes cut into 8ths or diced
- Balsamic Glaze drizzle
- Fresh Basil chopped for topping (optional)
Instructions
- Preheat the oven to 350 degrees and prepare a baking sheet with a baking mat, parchment paper, or aluminum foil.
- Using a bread knife, slice the fresh bread into slices about 1/4 inches thick. If the bread slices are too thin they will fall apart and if they are too thick the bread to topping ratio will be off.
- Place the baguette slices onto the baking sheet and either brush them with olive oil or spray them with an olive oil sprayer.
- Lightly sprinkle with garlic powder.
- Bake for 5 minutes until they are lightly toasted. Some French baguettes come pre-baked and you can skip this step. You just want to make sure the bread doesn’t get soggy when the toppings are added.
- While the bread bakes, slice the tomatoes into eights or fourths depending on size.
- Then cut the fresh mozzarella pieces in half so they cover the baguette slices nicely.
- Once the bread is baked and cooled for a few minutes, use a spoon to smear about a half a tablespoon of pesto onto each slice of bread.
- Place a slice of mozzarella cheese and about five slices of tomato on top of the bruschetta toasts.
- Bake in the oven for an additional 5-7 minutes or until the cheese is melty.
- Remove from the oven and cool for 5 minutes.
- Drizzle with balsamic glaze and a sprinkle of fresh basil just before serving.
Notes
These will get soggy as they sit. I do not recommend making these ahead of time. If you are running short on time, the bruschetta toasts and the pesto (if making homemade pesto) can be prepared ahead of time and the tomatoes and basil can be chopped ahead of time, but do not assemble until ready to serve.

Storage/Leftovers
Bruschetta doesn’t store well once assembled. The bread will soften, the tomatoes will leak, and the whole thing turns into a sad, soggy mess. If you need to prep ahead, store each component separately. Keep the toasted bread in an airtight container at room temperature for up to two days. It’ll stay crispy as long as no moisture gets in. Store the drained tomatoes in the fridge in a covered container for up to two days. The mozzarella should stay in its original packaging or wrapped tightly in plastic. Pesto keeps in the fridge for five to seven days depending on if it’s fresh pesto or store bought.
