What are Polish Mistake Sliders?
In case you missed the original recipe for Polish mistakes, it is a long standing classic recipe my family has been making for decades. They are a great appetizer made from a mixture of ground beef and hot sausage mixed with Velveeta cheese, Worcestershire sauce, and seasonings served on cocktail rye bread slices. Sometimes they are referred to as party pizzas, polish disasters, or hanky pankies. Because my dad is Polish, the Polish Mistake name was always our go to.
The Polish mistake slider is my personal creation I made for football season snacking when we were craving Polish mistakes but cocktail bread was out of season. This is the perfect game day combination of flavors, simplicity, and guilty pleasures. I simply took my OG polish mistake recipe and combined it with slider buns instead of party rye for a simple sheet pan appetizer everyone will want a second helping of.

This is an uncomplicated party appetizer that looks impressive but doesn’t chain you to the stove. It uses accessible ingredients and feeds a crowd. Plus, the combo of savory sausage, ground beef, melty Velveeta, and soft Hawaiian rolls creates a sweet and savory magic that people will fight over.
Slider Ingredients
This easy appetizer recipe boils down to simple ingredients used in the best way to create an addicting handheld bite. Here is what I used and what can be substituted for the best results.
- Hawaiian Rolls – Kings Hawaiian rolls are the best slider buns in my opinion! And if you get them at Costco, you can buy a two pack of rolls for less than $7! These provide the sweet component that offsets the savory combination of meats and cheese. While you could use white bread rolls or regular rye bread buns, the flavor of Hawaiian rolls is what makes these sliders special.
- Ground Beef – This recipe is a 1:1 mixture of ground beef and sausage. Typically I would not recommend using extra lean ground beef because it is prone to drying out, however, the combination of cheese and sausage make that less likely here. You can even use ground turkey but it would not be my first choice. The other ingredients will add plenty of flavor, just don’t swap the sausage for a low fat version.
- Ground Sausage – The second base ingredient is ground sausage. Hot Italian pork sausage gives the best flavor. Spicy breakfast sausage works in a pinch or mild sausage if spicy isn’t for you. Stay away from turkey sausage because it has no flavor and just becomes dry. It may seem like a contradiction but I would also skip Polish sausage because of the casing.
- Velveeta Cheese Block – Ok, I know this one is controversial. Processed cheese isn’t for everyone, myself included, but in this recipe it is the best way to go. I have made this with real cheddar cheese and it just doesn’t work the same way. The gooeyness of Velveeta is 100% necessary to make them amazing! If you must substitute, American cheese in block form (from the deli in the grocery store) is a good option. The only other one I can recommend is Provel (not provolone, Provel). It’s a St. Louis cheese made famous by a local pizza chain, Imo’s. It is difficult to find outside of the STL but if you happen to have a block, Provel does make a good substitute for Velveeta in this recipe.
- Velveeta Cheese Slices – A few slices of Velveeta on top of the sliders give it an extra gooey cheese pull, but this is optional.
- Worcestershire Sauce – A key flavor component in this recipe is the condiment no one can pronounce, haha! But this potent sauce gives it something extra with its umami flavor of sweet, salty, and sour all at once.
- Garlic Powder – I use garlic powder in this recipe because it combines the easiest. You can use fresh garlic if you want but honestly I think garlic powder works better here.
- Oregano – This herbal spice is common in Italian seasonings. It adds a little extra flavor and really compliments the garlic, Worcestershire sauce, and meat mixture well. You can use fresh if you have it, but the ground spice version works just fine.
- Butter – Unsalted butter with a mix of garlic powder and oregano gets brushed on top of the Hawaiian rolls before they go in the oven. Real butter works best.
Cooking Options
Baking on a sheet pan in the oven is what makes this easy. You can bake a whole tray at a time on a single cookie sheet. The toaster oven is best left for reheating due to space.

Ingredients
Polish Mistake Meat Mixture
- 1 lb Ground Beef
- 1 lb Ground Hot Sausage
- 1 lb Velveeta Cheese cubed
- 1 1/2 tbsp Worcestershire Sauce
- 1 tsp Oregano
- 1 tsp Garlic Powder
Polish Mistake Sliders
- 16-32 Hawaiian Rolls
- 5 slices Velveeta Cheese
- 3 tbsp Unsalted Butter
- 1/4 tsp Oregano
- 1/4 tsp Garlic Powder
Instructions
- Pre-heat oven to 325.
- In a deep skillet, brown the ground beef and sausage on medium heat until cooked through. Drain liquid.
- Add garlic powder, Worcestershire sauce, and oregano to the cooked meat.
- Dice Velveeta into small cubes and add to meat mixture in large skillet.
- Cover with a lid and cook meat, cheese, and seasonings on low heat for 10-15 minutes, stirring occasionally until the cheese melts and is fully combined.
- On a cutting board, slice the tray of Hawaiian rolls in half but do not pull apart the individual rolls. Place the bottom half of the rolls onto a large baking sheet.
- Spoon the meat cheese mixture onto the bottom half of the rolls in a single layer and spread out evenly all the way to the edges.
- Top with cheese slices and the top half of the Hawaiian rolls.
- In a small glass bowl melt 3 tablespoons of butter in the microwave with 1/4 teaspoon oregano and garlic powder. This works best if you cut the butter into small cubes (about 1/2 tablespoon) first. Then use the melt butter button on the microwave or in 15 second intervals on half power.
- Once the butter is melted, mix well and use a basting brush to coat the top of the rolls with the butter seasoning mixture.
- Bake polish mistake sliders in a preheated oven for 10 minutes or until golden brown and the extra cheese is fully melted.
- Slice and serve.
Notes
This makes 16-32 sliders depending on how full you fill them. Cooking time may vary, but keep an eye on them in the oven so they stay moist & delicious.
