What is Sriracha Mayo?
Sriracha mayonnaise is a spicy sauce made from a mixture of mayonnaise, sriracha hot chili sauce, and lime juice. It is often used as a dipping sauce for french fries, sandwich spread, or as a drizzle on rice bowls or sushi rolls. This creamy sauce has become a very popular condiment in the United States and can also be bought in grocery stores in bottled form.
Why You Will Love This Recipe
When it comes to easy sauces this spicy mayo recipe is beyond simple. Three ingredients, five minutes, and a spoon. That is all it takes to have this delicious condiment grocery stores charge $8 for! Highway robbery. With minimal effort and ingredients you probably have in the fridge, you can make this homemade sriracha mayo recipe. It’s the perfect topping for spicy tuna rolls, beef bulgogi bowls, or as an easy dipping sauce for fries.
Sriracha Mayo Ingredients
This creamy sriracha mayo uses only three basic ingredients you probably already have on hand. Below is what I specifically use for the best results.
- Sriracha – This is your heat and a fair amount of the flavor. Sriracha adds notes of garlic, chili, sugar, and vinegar all in one for a good balance of flavors. And while there are many different types of hot sauce, sriracha is really like no other. Even though it is spicy, it is not as vinegary on the taste buds as tabasco sauce (which I do love!) and it has a thicker, less runny consistency. The best part about making your own is you can customize the heat to have as little or as much fiery kick as you want.
- Mayonnaise – This is your base. It provides creaminess, body, and that rich, fatty mouthfeel that makes the sauce cling to everything. Use regular full fat mayo and definitely not Greek yogurt. Not vegan mayo unless you’re into that. Regular mayo has the right texture, tang, and saltiness to hold up against sriracha’s punch. Kewpie mayonnaise which is what most sushi restaurants use, will give you a richer, slightly sweeter result if you want to get fancy, but it’s not required. You can also make your own mayo with egg yolks if you want.
- Lime Juice – This gives the sauce the acidity it needs. It cuts through the richness of the mayo and wakes up the sriracha. Without it, the sauce tastes a bit flat and one note. Lemon juice is a decent substitute, but lime has that tropical brightness that just pairs better with sriracha’s heat.

Storage
If you somehow have leftover sriracha mayo (unlikely, but let’s pretend, haha) here’s what to do. Store it in the fridge in an airtight container for up to a week. Since this recipe contains dairy and hot sauce which contains vinegar, the shelf life can be limited. I usually only make what I intend to use for a meal so I do not waste any. A small glass jar is usually enough.
When to Make Sriracha Mayo
I make this creamy sriracha sauce at least once a week! It is the perfect drizzle on bulgogi lettuce wraps, egg ramen bowls, as a dipping sauce for salmon patties, or on sweet potato fries. Since it takes less than five minutes, you can whip it up in a hurry any time your dinner needs an extra kick of flavor and tang.
