What is a Mini Chocolate Bourbon Pecan Pie?
Just like a full size traditional pecan pie, these mini pies are a single serving made in muffin cups. This mini pecan pie recipe contains all the same goodies as a full size pie with my own spin of chocolaty goodness and a hint of bourbon.
Ingredients
For the most part, classic pecan pie recipes are composed of similar ingredients. These ingredients can vary in quantities producing very different flavors but the building blocks are essentially the same. Let’s go over the basics that will produce the best results.
Pie Dough – While I normally do make my own homemade pie crust, I wanted to keep things easy here. I used pre-made refrigerated pie crust for mini pies. You can find these at the grocery store in the cold section next to the crescent rolls and biscuit dough. These are perfect if you don’t have time for homemade mini pie shells.
Chocolate Chips – Because this is a sweet filling I think it’s best to use a bittersweet chocolate, semi sweet chocolate, or dark chocolate chips in this recipe. It gives the pies a richer chocolate flavor instead of just adding sweetness like you get with milk chocolate chips.
Pecans – It wouldn’t be a pecan pie without them! It’s best to use chopped pecans since these are small pies. I usually buy my pecans whole at Costco because they are a better deal and then chop them myself. You can lightly pulse them in a food processor or add them to a plastic bag and use the back of a spoon to smash them up.
Bourbon – Nothing says Southern style pie like adding a bit of bourbon! You don’t have to add bourbon if you don’t want to but it definitely adds to the flavor. It is a very small amount so you can buy a mini bottle if you don’t keep bourbon on hand. I used Maker’s Mark because we keep it stocked in our bar and it has a slight hint of vanilla that goes well with the pies.
Brown Sugar – Dark brown sugar is preferred for this recipe because it contains more molasses, but light brown sugar will work too. I used dark brown sugar.
Butter – I used real unsalted butter for my pies, but since it just goes in the filling and we are not making a butter pie crust here you can use margarine if you want but I have not tested that.
Vanilla – When baking, you should always use pure vanilla extract if you can. It adds an extra sweetness that combines with the other ingredients to create a complex flavor in baked goods.
Dark and Light Corn Syrup – Most pecan pies use corn syrup to hold the filling together and give it a sweet taste while adding moisture so the pie isn’t dry. I think the best pie is made with both light and dark since they have slightly different tastes.
Eggs – This is your binder for all the wet ingredients and dry ingredients. Not only will it hold everything together, but it will also add moisture to the pie due to the high water content in the egg whites.
Salt – A little bit of salt helps balance out all the sweetness from the sugars in the pie filling.
Toppings – Feel free to top your mini chocolate pecan pies with a dollop of whipped cream or a scoop of ice cream.
Mixing Options
The easiest way to mix the pie filling is in a large bowl using an electric hand mixer or a stand mixer.
Assembly
Roll out the pre-made pie crust and cut out the individual perforated pie doughs. If you make your own pie crust you can cut these out using a round cookie cutter or the rim of a glass or jar.
For this step you will need a muffin pan to bake the mini pies in. Once the pie dough is cut out, generously grease the pan with cooking spray and place each of the circles of dough over the center of each cup and press into place. You can use a small glass to help flatten out the bottoms.
Mix up the filling and add a scoop to each pie. I used my perfect cookie scoop for this step.
