What are Chocolate Peanut Butter Ritz Crackers?

Chocolate peanut butter cracker treats are an easy no bake dessert made with Ritz crackers and creamy peanut butter sandwiched together and covered in a rich chocolate coating. For added festive flare this sweet treat can be decorated with holiday sprinkles or candies.

Ingredient List

This peanut butter cracker sandwich recipe is a fun treat and easy dessert made with simple ingredients. The best part is it doesn’t require you to bake cookies and is a great activity for the kids to participate in. Here are my notes for you on ingredients 😉

Ritz Crackers – For this recipe I used original Ritz crackers fresh stacks. They come in sleeves of 14 to keep them from going stale after opened. I only had one full sleeve left over. These are the perfect salty and crunchy cracker to offset the chocolate.

Peanut Butter – For the filling I used creamy peanut butter. You can use any brand you like, Jiff, Peter Pan, Skippy or whatever you have on hand. I used good old fashioned Skippy. Just make sure you use creamy peanut butter not crunchy.

Powdered Sugar – Also known as confectioner’s sugar or icing sugar. This ingredient is optional but helps sweeten the peanut butter a bit so it tastes more like a Reese’s peanut butter cup.

Melting Chocolate  – When I was testing this recipe I made it with both chocolate chips and with melting chocolates. It can be done either way, but if you choose to use chocolate chips you will need to add a tablespoon of Crisco per every cup of chocolate chips for a smoother melting consistency and chocolate chips will also take longer to set up.

I used dark chocolate candy coating here which is meant to be dipped. This also comes in a white and milk chocolate option which you could also use. You can find melting chocolate in the baking aisle at your local grocery store.

Holiday Sprinkles – To create festive treats and keep decorating really simple, I used a variety pack of Halloween sprinkles to top each treat. You can also use other holiday candies like candy corn, candy eyes, or colorful M&Ms. You can also modify the sprinkles to accommodate Christmas time or treats for Valentine’s Day, Easter, St. Patrick’s Day, or even 4th of July.

Filling the Crackers

To fill my Ritz crackers I used a quart size Ziplock bag as a pipping bag. Simply place the bag inside a large mug and fold over the zipper edge. Then scoop the peanut butter mixture into the bag, get all the air out, and zip it closed. Then use a pair of scissors and cut off 3/4 inch of one corner of the Ziplock bag. Now you can simply squeeze a dollop onto each cracker much faster than spooning a tablespoon of peanut butter onto each one. I timed myself and it took me 1 minute to fill all of mine using the bag method.

Melting the Chocolate

I melted the chocolate in the microwave in the tray it came with but you can also use a microwave-safe bowl. Before melting I used a knife to break the chocolate along the large lines to help the heat distribute to the middle better. Melt chocolate in the microwave on 50% power for 120 seconds and then in 30 second intervals, stirring in between until the chocolate is melted and smooth. Do not rush the melting process or it could burn and will be ruined. The chocolate should be fairly hot to keep it smooth.

After it sits at room temperature for a while it will become more difficult to work with. About halfway through dipping I had to reheat my chocolate to keep it pliable.

Dipping the Crackers

You have a few options for dipping. First, you can use white chocolate, milk, or dark chocolate to dip the crackers. For Halloween I liked the dark chocolate because it was closest to black but you can use white or milk chocolate as well. Then you can either dip half of the Ritz crackers or cover the entire thing. I made mine both ways.

The best way to dip the crackers is to dunk them in and then rotate them around a little to make sure it is evenly coated. Almost like a dredge. To coat the entire cracker sandwich, dunk the whole thing in and then flip it over to coat the other side.

Decorating

To keep these yummy treats simple, I used a variety of Halloween sprinkles to decorate them. But you could use any candy in orange, yellow, black, or white. You could also decorate with colored candy melts or royal icing.

Description

This is the easiest recipe for a no bake holiday treat. These Halloween chocolate dipped peanut butter crackers combine three American favorites, peanut butter, chocolate, and delicious Ritz crackers! These Halloween chocolate peanut butter Ritz crackers are an easy sweet and salty treat and so much fun to make. Full of chocolaty goodness and creamy peanut butter, they only use a handful of simple ingredients and the kids can help! Perfect for holiday parties and special occasions.


Ingredients

  • 1 1/2 cup Peanut Butter
  • 1/4 cup Powdered Sugar
  • 2 tbsp Water
  • 1 pkg Ritz Crackers
  • 1 pkg Melting Chocolate
  • Halloween Sprinkles

Instructions

  1. In a large bowl, mix peanut butter, powdered sugar, and water with a whisk or an electric hand mixer.
  2. Place ritz crackers on a sheet pan lined with wax paper spacing them out so they are not touching.
  3. Add a dollop of peanut butter to each cracker using either a spoon or my piping bag method discussed above.
  4. Place a second Ritz cracker on top of the peanut butter and gently press down careful not to break the cracker.
  5. Melt the melting chocolate in the microwave on 50% power for 120 seconds. Once it starts to melt, microwave on 50% power in 30-second increments stirring in between until the chocolate is smooth. Do NOT try and rush this part or the chocolate will burn.
  6. Once the chocolate is melted, dip the crackers or fully immerse them in the chocolate for a covered cracker.
  7. After coating the peanut butter Ritz crackers, lay them out to set up on a cookie sheet or wire rack lined with wax paper or parchment paper. For my half dipped crackers I found that I could stand them up on end in my mini muffin tin so I could decorate both sides.
  8. While the chocolate is still wet, use your hand to drizzle the sprinkles over each cracker. If you use melting chocolate it sets up faster so don’t wait too long.
  9. Once all the Ritz cracker sandwiches are dipped or covered, place the baking sheet in the fridge for 30 minutes to set the chocolate.
  10. Warning, you may need a cold glass of milk to go with these 😉

Storage

You can store chocolate peanut butter ritz crackers in an airtight container at room temperature for up to a week. After that the dipped crackers start to go stale.
