What are Avocado Toast Deviled Eggs?

Deviled eggs are an American staple traditionally served as a classic appetizer or side dish during Easter. They use peeled hard-boiled eggs that are cut in half long ways. The yellow yolks are removed and mixed with any additional seasonings, spices, mayo, and usually mustard to make a creamy yolk mixture that will be placed back inside the white halves of each egg. When all is said and done you have a delicious handheld bite that can be served as an appetizer or side dish for any meal.

This recipe is a play on a classic deviled egg that incorporates avocado for a twist on avocado toast. Basically I stuck to the ingredients I would use on avocado toast to create this new deviled egg flavor!

Ingredients

A variety of ingredients including hard-boiled eggs, mayonnaise, several spice jars, avocados, a lime, and a block of cheese are arranged on a white surface against a gray background.

Hard Boiled Eggs  – The base of any deviled egg recipe is hard boiled eggs. You are welcome to use fresh eggs and make your own hard boiled eggs but one thing I hate doing is peeling eggs. My preferred method is buying the pre-made hardboiled eggs. They are more expensive but for the sake of my sanity, I think it’s worth it. I found mine at Wal-Mart but I have seen them at Costco, Sam’s, and Kroger too. Either way, you need hardboiled eggs for this recipe.

Avocados – The main ingredient in avocado toast is ripe avocados and they will help to create the green color. The perfect avocados are a bit soft but not super squishy. Hard avocados will take about a week to ripen at room temperature. Ripe avocados can be preserved in the fridge for about a week. So keep that in mind when choosing your avocados at the grocery store. The best way to use the entire avocado is to cut it in half and a small piece off one end. Then peel the outer flesh away.

An avocado on a cutting board, partially peeled and halved. The pit is removed, and a knife is nearby, showing the smooth green flesh inside.

Mayonnaise – The creamy base of the egg yolk mixture is mayo. I used a few tablespoons of real mayo but any brand of plain mayo will work here. I have not tried substituting this with sour cream or Greek yogurt so do so at your own risk.

Seasonings – For this recipe I used all the seasonings I would normally put on top of avocado toast. I used a combination of garlic powder, chili powder, everything bagel seasoning, salt, and black pepper.

Lime Juice – This gives the deviled egg mixture some acidity to balance out the avocado.

Cheese – I used about a fourth of a block of mozzarella cheese to make the stars and create the snow effect on the trees. You can use any white cheese you want as long as it isn’t too soft.

Decorating the Trees – To give these deviled eggs a festive touch, I decorated mine to look like Christmas trees. I used chili powder, chili flakes, chopped cilantro and freshly shaved mozzarella for the snow and the star. If you don’t like anything spicy you can also use paprika, small pieces of red bell pepper, or tomatoes.

Green Food Coloring – The green colors in this recipe will vary unless you use food coloring. The filling will be naturally a bit green from the avocado, but it will be a light green. If you want a more vibrant green add a few drops of green food coloring. I used 6 drops. This is optional.

Mixing Options

Normally I mix all the ingredients together in a medium bowl with an electric hand mixer but you can also use a stand mixer, a food processor, or mash yolks and avocado with the back of a fork and hand mix the other ingredients in.

How to Fill Deviled Eggs

Four images in sequence show the process of making deviled egg filling with avocado. A bowl of green mixture, filling a plastic bag using a mug, closing the bag, and piping the mixture onto hollowed egg whites.

The easiest way to fill the white egg halves is to use a piping bag or a pastry bag and a star tip to make the filling look pretty. If you do not have a piping bag you can use a plastic baggie. Place a large star piping tip into one corner of the bag and poke it through a little bit to mark where you need to cut. With the tip inside the corner of the bag, place the bag inside a large cup like a beer stein and fold over the zipper edge. Then scoop the deviled egg filling into the bag, get all the air out, and zip it closed. Then use a pair of scissors to cut off the corner at the marks you made.

Now you have a DIY piping bag you can throw away when you are done. Just don’t forget to get the star tip out before tossing it.

Because these eggs use a little more filling than traditional deviled eggs, I recommend flattening out the bottoms so they don’t tip over. Flip the white half of the egg over with the hole facing down and use a sharp pairing knife to slice off a tiny bit. Be careful not to cut too much off.

Two images show hard-boiled eggs being prepared for deviled eggs: at the top, yolks are placed in a green bowl, while egg whites are on a surface; at the bottom, egg whites sit beside a knife on a cutting board.

How to Make the Stars

I made the white star shapes out of mozzarella cheese and these mini cookie cutters. Just slice a block of cheese into 1/4 inch slices and use the cookie cutters to cut out the stars. This works best if you do not cut the cheese too thick. If you have a hard time getting the stars to pop out use the top flat end of a chop stick to push it out.

Description

Looking for the perfect holiday appetizer? You have to try these avocado toast Christmas tree deviled eggs! A mashup of avocado toast and classic creamy deviled eggs makes the cutest holiday appetizer that looks like mini Christmas trees. They taste just like avocado toast only in deviled egg form! A modern version of a holiday staple, this Christmas deviled eggs recipe is sure to impress your party guests and add some festive flare to your holiday table as an appetizer or as a side dish. Take your deviled eggs to a whole new level!

Ingredients

Scale
  • 6 Hard-Boiled Eggs (Fresh Cooked or Store Bought)
  • 1 1/2 Large Avocados
  • 2 tbsp Mayo
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Chili Powder
  • 1/2 tsp Everything Bagel Seasoning
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 1/4 block of White Cheese (Mozzarella or White Cheddar)
  • Lime Juice from 1/2 of a Lime
  • Cilantro for garnish
  • Red Pepper Flakes for garnish
  • 6 drops of Green Food Coloring (optional)

Instructions

  1. Hard boil 6 eggs and peel the white shell off or buy pre-made hardboiled eggs like I did to make this super easy!
  2. Place eggs on a cutting board and slice eggs in half lengthwise and remove the egg yolks. They should pop out easily if you flip them over and press on it lightly.
  3. Flip the white half over with the hole facing down and slice off a tiny bit to flatten out the bottom. See my notes above on this step.
  4. Add all the egg yolks to a medium bowl and combine with the avocados, mayo, garlic powder, chili powder, everything bagel seasoning, salt, pepper, and lime juice. I used an electric hand mixer for this part.
  5. Place mixture into a Ziploc bag or piping bag. (see above instructions on my plastic bag method)
  6. Place the hard boiled egg whites into a deviled egg tray or plate and gently squeeze mixture into the cavity. If using a round tray or plate, start in the middle so you don’t have to reach over eggs that have already been filled. You will want to do this in a three squeeze up and down motion to get the tiered effect of the Christmas tree. Be careful not to overfill as they get top heavy.
  7. Sprinkle the tops of the eggs with additional chili powder, cilantro, red pepper flakes, and freshly shredded cheese.
  8. Top with cheese stars. See notes above on how to make the stars.
  9. Store leftovers in an airtight container in the fridge for up to 3 days.

Storage/Make Ahead Instructions

Because avocados brown quickly, these should be made just prior to serving. After about eight hours they will start to turn brown. They will last for about 3 days in the fridge in an airtight container, but they will not look very appetizing.

Deviled Egg Trays

If you are making these for a holiday party you might want to consider a deviled egg carrier or deviled egg plate. Eggs tend to roll around a lot and don’t stay put very well during transport. Not only does a deviled egg tray make it easier to serve these it also keeps them steady during transport and filling.

When to Make Christmas Tree Deviled Eggs

This festive appetizer is perfect for the holiday season! They can serve as a side dish or as an appetizer for Christmas parties or Christmas dinner. You can even opt to leave the stars off and serve them as winter trees for other cold weather gatherings. You can also make them as avocado eggs and fill them in little circles rather than trees and enjoy them anytime of year. They make a filling snack and are perfect for summer picnics, cookouts, holiday dinners, and of course brunch! These are always a hit and definitely a family favorite!
