What is a snickerdoodle cookie?
Snickerdoodle cookies are one of my absolute favorites when it comes to cookies! They are a type of sugar cookie that contains cinnamon and sugar and tend to be on the chewy side. For this recipe I have combined this amazing cookie with chocolate chips to create a play on s’mores in a cookie form!
Ingredients
This is my favorite snickerdoodle cookie! For the most part, snickerdoodle cookies are composed of a few basic ingredients. These ingredients can vary in quantities producing very different cookies but the building blocks are essentially the same. Let’s go over the basics that will produce the best results.
Butter – You will need real unsalted butter for this recipe. Butter is the primary fat content in the cookie but also contributes to the overall structure of the cookie. Most cookie recipes and baking in general call for creaming the butter and sugar in one of the first steps. This is important! If you melt the butter, the fat will not combine and coat the protein in the same manner and you will end up with flat thin cookies. Bring the butter up to room temperature before making the cookie dough.
Sugar – Sugar is one of the key components to all cookie recipes and establishes the ph of the cookie dough. Almost every cookie recipe I have seen calls for at least some white sugar or granulated sugar.
Brown Sugar – Light brown sugar or dark brown sugar will both work here. I used light brown sugar.
Eggs – This is your binder for all the wet ingredients and dry ingredients. Not only will it hold everything together, but it will also add moisture to your cookies due to the high water content in the egg whites.
Vanilla – When baking, you should always use pure vanilla extract. It adds an extra sweetness that combines with the other ingredients to create a complex flavor in baked cookies.
Honey – To add a little extra sweetness and mimic the taste of graham crackers I added a little bit of raw honey to the cookie dough. You can also use maple syrup.
Flour – Even though there are several different types of flour, I stick to all purpose flour for making cookies.
Cornstarch – If you love a soft cookie, cornstarch is the secret! It creates a slightly thicker cookie with a soft and chewy consistency.
Baking Soda – Do you really need this? YES! Baking soda is usually a very small ingredient but a very important ingredient! The baking soda reacts with the acidic brown sugar and produces carbon dioxide which creates softer and thicker cookies.
Cream of Tartar – With a similar effect to cornstarch, this ingredient helps create chewy cookies as it prevents the sugars from crystalizing. This is why cream of tartar is a common ingredient in sugar cookies and snickerdoodles.
Cinnamon – A very potent spice and essential ingredient in snickerdoodles. You can also use pumpkin pie spice here.
Salt – A little bit of salt helps balance out all the sweetness from the sugars in cookie dough.
Chocolate Chips – Since the goal of these cookies is to mimic a s’more, I added chocolate chips to the cookie dough. I used semi sweet but you can use milk chocolate chips if you like.
Peeps – To make these Halloween cookies I added ghost peeps to the top. The combination of the snickerdoodle cookie with chocolate chips and the marshmallow peeps makes these cookies taste just like a s’more!
Mixing Options
For best results, you will want to use a large bowl or the bowl of your stand mixer. Either an electric hand mixer or a stand mixer will be the best option to mix the cookie dough.

Ingredients
- 1/2 cup Unsalted Butter
- 1/2 cup White Sugar
- 1/4 cup Brown Sugar
- 1 Egg
- 3/4 tsp Vanilla
- 1 tbsp Honey
- 1 3/4 cup Flour
- 1/2 tsp Cornstarch
- 1/2 tsp Baking Soda
- 1/2 tsp Cream of Tartar
- 1/4 tsp Cinnamon
- 1/4 tsp Salt
- 1 cup Chocolate Chips
- 2–4 pkg Ghost Peeps
- Tooth Picks
Instructions
- Pre-heat oven to 350 degrees.
- Cream butter and both sugars in a large bowl or the bowl of a stand mixer on medium speed. Note, the butter must be at room temperature and soft but not melted for this to work. Do not use margarine.
- Add in the egg, vanilla, and honey and mix until combined.
- In a separate bowl combine flour, cornstarch, baking soda, cream of tartar, cinnamon, and salt and whisk until combined.
- Slowly mix in the flour mixture with wet ingredients one cup at a time, mixing until combined. Do not over mix.
- Scoop cookie dough onto a large baking sheet. Make sure you use a greased cookie sheet, parchment paper, or a baking mat. To create smooth cookies, roll the cookie dough balls round in your hands before placing on pan.
- Bake for 9-12 minutes or until golden brown. Cooking times may vary.
- Cool for at least 15 minutes before removing from the pan with a rubber spatula.
- Once cookies are cooled, stick one end of a toothpick into the bottom of a ghost peep and the other end into the cookie. Remove toothpicks before eating.
Notes
- Bake time will vary. I always start at the low end to prevent over cooking.
- I made large cookies to accommodate the ghosts which yielded 16 cookies. If you make them smaller, it will yield about 21 cookies.

Storage
Leftover s’mores cookies can be stored in an airtight container at room temperature for up to 5 days.
