Why You Will Love Thai Peanut Lettuce Wraps
If you have ever dined at PF Chang’s you have likely had their famous lettuce wraps. But dare I say these are better than takeout? Well I just did. If you have goals of eating more carb light meals while still enjoying your favorite recipes, this one is for you!
Ingredients
These easy Thai peanut ground turkey lettuce wraps are my go-to recipe for a light dinner on busy weeknights. Here are my notes on the ingredients that will give you the best results.
Romain Lettuce – I buy a pack of romaine lettuce at Costco to make my wraps, but you could also use butter lettuce leaves (aka Boston lettuce) or bibb lettuce if you can find it. But the best lettuce in my opinion is really just the large lettuce leaves on the outside that you can fold up kind of like a taco. As you peal away the leaves they get smaller on the inside and harder to add the ground turkey mixture. I don’t recommend using iceberg lettuce since it is usually sold in large round heads vs longer boat shaped pieces of lettuce.
Ground Turkey – For the lettuce wrap filling in this recipe I used a pound of ground turkey. You can find this in the meat section at the grocery store. Mine was 85% lean ground turkey but you can use a leaner version if you want. I have also made these with ground chicken, however I like the turkey a little better. I have not tested this using ground beef.
Thai Peanut Sauce – For this easy recipe I use my own homemade sauce that uses basic Asian cooking ingredients. It only takes ten minutes to make and is better than the takeout or grocery store version. Note, this is a slightly spicy sauce but you can modify the heat level by reducing the amount of Sriracha or increasing the heat with red pepper flakes.
Bell Peppers – I like to add a bell pepper for added sweetness, color, and another veggie component. I typically use a red or yellow pepper depending on what I have on hand.
Carrots – Filling a lettuce wrap with more veggies makes this tasty dish more guilt free, haha! You can buy a whole carrot and shred it in in the food processor or buy a bag of pre-shredded carrots.
Green Onions – Green onions pair really well with Asian dishes, add a lot of flavor, and are best served raw. All that makes them the perfect topping for Thai peanut lettuce wraps.
Peanuts – These will add a little bit of crunch on top of the lettuce wraps. I usually add a handful to a Ziplock bag and crush them with the back of a spoon.

If you love lettuce wraps and bold Asian flavors you have to try this tasty wrap! These Thai peanut spicy ground turkey lettuce wraps are a guilty pleasure while still being a low carb option. They are full of umami flavor, lean protein, creamy peanut butter, and crisp lettuce and veggies. They are perfect for busy weeknights or a great appetizer. Trust me, these will become a part of your regular meal prep because the whole family will love these!
Ingredients
Thai Peanut Sauce
- 1/2 cup Peanut Butter
- 2 tbsp Hoisin Sauce
- 2 tbsp Sriracha
- 1 1/2 tbsp Low Sodium Soy Sauce
- 1 1/2 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 6 tbsp Water
Lettuce Wraps
- 1–2 Heads Romaine Lettuce
- 1 lb Ground Turkey
- 4 Green Onions chopped
- 1 tbsp Olive Oil
- 1/4 cup Shredded Carrots
- 1/2 Yellow or Red Bell Pepper diced
- 2 tbsp Peanuts crushed
Instructions
Sauce Instructions
- Combine all ingredients in a small bowl and blend with an immersion blender or a food processor and set aside. Note, this is a thick sauce.
Lettuce Wrap Instructions
- Wash and dry the lettuce leaves and set aside.
- In a large skillet over medium heat, add a small amount of olive oil and sauté the bell pepper and shredded carrots until soft. Season with salt and pepper to taste. Remove from heat and set aside.
- In the same frying pan, cook the ground turkey over medium to medium-high heat until it is no longer pink, about 6-8 minutes.
- Drain the meat and return to the pan.
- Pour 1/2 to 3/4 of the Thai peanut sauce over the meat and simmer on low heat for about 2 minutes.
- Before removing from the heat mix in the sautéed red pepper and carrots.
- Add peanuts to a Ziplock bag and use the back of a spoon to crush them into smaller pieces.
- Fill each of the lettuce cups with about two tablespoons of the turkey mixture, depending on size.
- Top with green onion, peanuts, and a drizzle of the remaining sauce.

Note, you do not have to cook the veggies if you prefer crunchy veggies. I think it is good both ways.

Storage
In the event you have leftover ground turkey lettuce wraps, store the cooked turkey filling in an airtight container in the fridge for up to 3 days. To prevent the lettuce from becoming soggy, store the lettuce and other veggies in separate containers in the fridge or in the crisper drawer.
When to Make Thai Peanut Turkey Lettuce Wraps
These delicious Asian turkey lettuce wraps make an easy weeknight dinner or can be made ahead of time for a great lunch. But honestly you can make these anytime you want because they only take 30 minutes and make a tasty meal that my family thinks is better than the PF Chang version. You could even make them as a delicious appetizer or snack. No matter when you decide to make them, these will definitely become a household favorite!
