What is Fruit Pizza?
Fruit pizza is a dessert pizza usually made with a sugar cookie base, a creamy frosting “sauce”, and decorated with fresh fruit on top. They are very popular summertime desserts when fruit is in season.
While most fruit pizza is made with a chewy cookie crust, Barry and my mom prefer chocolate desserts so I decided to think outside the sugar cookie pizza and used a brownie as the base. This was the perfect way to compromise 🙂
Patriotic Fruit Pizza Ingredients
This easy fruit pizza recipe is the perfect dessert for the 4th of July and is one of my favorite things to make for backyard cookouts. Here are my notes for you 😉
Brownie Mix – To save on time I used a brownie mix but you are welcome to use any brownie mix or recipe you want. Dark chocolate is the preference in my house, so that’s what I used here. Pro Tip: Instead of water, use milk for a moist brownie.
Vanilla Icing – I chose to make my own icing because I am kind of picky about cream cheese frosting. This frosting is a sweet cream cheese buttercream icing. I prefer a sweeter frosting than the usual straight cream cheese icing or the cool whip method which is really light and not very sweet. You can definitely use store bought if you are short on time, but homemade icing is actually really easy. All you need to make my homemade version is butter, powdered sugar, vanilla, cream cheese, and heavy cream.
Fresh Berries – I used a combo of fresh strawberries and blueberries, but you can also use raspberries, cherries, blackberries, concord grapes or any other red and blue fruits.
How to Make the Brownie
I baked my brownie base in a 12 inch deep dish pizza pan lined on the bottom with parchment paper. I traced the diameter of the bottom of the pizza pan and cut it out with scissors. I then sprayed the pan with non-stick cooking spray and laid the parchment paper on the bottom of the pan. I sprayed the parchment paper once it was in the pan as well to make it easier to remove once the brownie was cooked.
After the brownie was cooked and completely cooled (2-3 hours) I used a butter knife to loosen the edges of the brownie around the pan. Then I flipped the pan over onto a flat surface and gave it a little tap around the base and it popped right out. Then I slowly peeled the parchment paper off the bottom.
It is very important that you let the brownie cool completely before removing it from the pan so it doesn’t break apart.
Icing the Brownie
Make sure the brownie is completely cooled and the frosting is room temperature before adding the cream cheese frosting. If the brownie is not cooled the icing will melt. If the frosting is too cold it will be very difficult to spread.
I think it is easier to ice the bottom rather than the top. When brownies bake they tend to get a puffy crust on the top that flakes off into the icing. And since my brownie was already upside down when I popped it out of the pan, it made perfect sense to me to simply ice the bottom.
I placed my brownie on a lazy Susan to make icing it easier. When you add the icing make sure you start with a generous amount. If you spread it too thin the brownie will flake off into the icing. I used a rubber spatula for this part.
Making the Fun Dessert Pattern
You can use any pattern you want, but I chose to keep things relatively simple. Since this is a fourth of July fruit pizza I wanted it to resemble a flag pizza without being overly complicated. I chose to use fresh blueberries and strawberries around the edge of the brownie in an alternating pattern.
Then I used a 4.25 inch star shaped cookie cutter and placed it in the center of the pizza and lightly pressed on it to make a slight indent in the icing that I could use as a guide to place blueberries in the middle. Then I filled in the star shape with additional blueberries and added some more on the inside edge of the strawberries.
Make Ahead Instructions
If you need to make this ahead of time, you can make the brownie and the frosting then ice it and top with the fruit the next day. The fruit will start to produce it’s natural juices when it comes in contact with the sugar in the icing. This will begin to leak all over the pizza so I do not recommend adding the fruit until you are ready to serve it.

Ingredients
- 1 box Dark Chocolate Brownie Mix
Frosting
- 1/2 cup Unsalted Butter room temperature
- 1 1/2 cup Powdered Sugar
- 3 tbsp Heavy Cream
- 3 tbsp Cream Cheese
- 2 tsp Vanilla Extract
Fruit Topping
- 1 pkg Fresh Strawberries quartered
- 1 pkg Fresh Blueberries
Instructions
Brownie Instructions
- Prepare the brownie mix according to package instructions. For a richer moist brownie, use milk instead of water.
- Generously grease a 12 inch deep dish pizza pan with non-stick cooking spray including the walls and bottom.
- Trace the bottom of the pizza pan onto a piece of parchment paper and cut out the circle.
- Place the cut out circle inside the pizza pan and spray it again with cooking spray.
- Pour the brownie batter into the pan and level it out. You can do this with a spatula or by tapping it on the counter.
- Cook the brownies according to package instructions and cool for 2-3 hours.
- After the brownie is completely cool, use a butter knife to loosen the edges of the brownie around the pan. Then flip the pan over onto a flat surface and give it a little tap around the base and it should pop right out. Then slowly peel the parchment paper off the bottom.
Frosting Instructions
- While the brownie cools, in a medium bowl cream butter with an electric mixer on medium speed until smooth. Note, the butter needs to be room temperature for this to work correctly. You can use a hand mixer or stand mixer.
- Add in powdered sugar, heavy cream, vanilla, and cream cheese. Mix until smooth and fluffy.
- When the brownie is completely cool, scoop a generous amount of icing onto each fourth of the circle. Using a rubber spatula spread in an even layer around the brownie. If you spread it too thin the brownie will flake off into the icing and become dirty looking.
- If making ahead of time, store in the fridge in an airtight container. Remove from fridge a half hour before icing the brownie so the frosting is at room temperature.
Decorating Instructions
- Wash the fruit and dry it completely. If the fruit is wet it will mess up the icing and the colors may bleed.
- Cut the green tops off the strawberries and quarter them.
- Place the strawberries and blueberries around the edge of the brownie in an alternating pattern.
- Using a star cookie cutter, place it in the center of the pizza and lightly press on it to make a slight indent in the icing. This will be your guide to make the blueberry star in the middle. Place the blueberries along the lines of the star you created with the cookie cutter.
- Fill in the star shape with additional blueberries.
- Add some more blueberries on the inside edge of the strawberries.
Notes
I frosted the bottom of my brownie to avoid getting chocolate crumbs in my icing.
Do not add the fruit until you are ready to serve.

How to Store Fruit Pizza
Leftover fruit pizza should be stored in an airtight container in the fridge for up to 4 days. The fruit will begin to make its own juices as it sits so for best presentation it is best to serve it right away. After about 4 days the fruit starts to ferment.

This patriotic dessert is the perfect sweet treat for a summer barbecue when you want to add a little red, white, and blue to the celebration. I love making it for the patriotic holidays like Independence day, Memorial Day, and Labor Day. This delicious treat is always a crowd favorite at summer parties! While I often make this as a tasty dessert for July 4th, it could easily transition into an anytime easy dessert pizza by swapping out the red and blue fruits for a variety of fresh fruit.
