Traditional sweet potato casserole is 100% an American invention that came from the push of canned sweet potatoes and marshmallows as pantry staples in the 1950s. The sugary, candy-coated, marshmallow topped casserole became a popular addition to the holiday season for Thanksgiving and Christmas and is now considered a nostalgic comfort food.

Personally, I don’t think marshmallows belong anywhere near sweet potatoes. I said what I said. And outside the US, sweet potatoes are given the proper savory treatment they deserve.

This dish is a play on the classic recipes but ditches the sugar rush for a savory casserole with a hint of sweetness, respecting the natural flavor without tipping into dessert territory and still delivering that cozy, baked casserole vibe.

Sweet Potato Casserole Ingredients

This sweet potato casserole uses basic ingredients you probably already have and only requires a few simple steps to make. Every ingredient here has a job, and swapping or skipping one can shift the entire flavor profile. Here are my notes for the best results with substitutions.

  • Sweet Potatoes – This is the base of your casserole. Fresh is the only way to go here. You want medium to large sweet potatoes with firm, smooth skins and deep orange flesh. Avoid any with soft spots or sprouting eyes. The orange variety gives you the best balance of sweetness and creaminess. While I love white sweet potatoes, they are a bit too starchy for this recipe.
  • Butter – Unsalted butter provides richness and gives the sweet potatoes the best flavor. Don’t use margarine or olive oil. It will drown the potatoes in oil and they won’t mash well. Salted butter can be used but you may need to adjust the level of salt added in the seasonings.
  • Milk – For this recipe I used 2% milk. You can also use whole milk, half and half, or heavy cream if you want but skip the skim milk as it is too thin to achieve a creamy base. I have not tested plant-based milk or non-dairy milk substitutes like almond or coconut milk.
  • Brown Sugar – Brown sugar and sweet potatoes are a complementary pairing. This helps bring out the natural sweetness without going full dessert mode. Dark brown sugar or light brown sugar will work here.

  • Seasoning Mix – A simple blend of chili powder, cumin, garlic powder, smoked paprika, cayenne, sage, thyme leaves, salt and pepper is the perfect balance of sweet and savory flavors. If you have fresh thyme and fresh sage, feel free to use them, but the dried spices work just fine. You can skip the cayenne if you don’t like any spice at all but don’t skip the rest.
  • Pecans – Pecans add a little bit of crunch to the top, elevate the fall flavors, and add a nutty taste. Walnuts work in a pinch, but pecans are less bitter. Skipping them won’t ruin the dish, but the texture contrast is worth it for a nice crunch.
  • Feta Cheese – Adds salty, tangy flavor that balances out the other ingredients. Goat cheese is a good substitute if you want something creamier with a tangy taste, but it will lack the saltiness.
  • Honey – Drizzled on top before the final bake, honey gives it a caramelized finish with just enough sweetness. I prefer Mike’s hot honey here for a slightly spicy addition, but regular honey works too. Maple syrup can substitute in a pinch just make sure to use pure maple syrup to avoid the artificial sweet taste.

Equipment You’ll Need

  • Large Pot: You need space to boil the sweet potatoes in a single layer without crowding too much.
  • Small casserole dish: I use a 8×6 or 8×8 casserole dish for this recipe. Too big of a baking dish and the casserole dries out. Stick to glass or ceramic. Metal heats faster which can overcook.
  • Potato Peeler: The sweet potatoes need to be peeled for this recipe.
  • Potato Masher or Mixer: Either works well here. I mashed the potatoes first with a potato masher and then used my electric hand mixer to cream the ingredients together directly in my pot.

Ingredients

  • 2 lbs Sweet Potatoes (about 4 potatoes) peeled and diced
  • 1/2 cup Unsalted Butter
  • 1/4 cup Milk
  • 1 tbsp Potato Water
  • 1 1/2 tbsp Brown Sugar divided
  • 2 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Thyme Leaves
  • 1/8 tsp Cayenne Pepper
  • 1/8 tsp Ground Sage
  • 1/2 cup Pecans
  • 2 tbsp Crumbled Feta Cheese
  • Drizzle of Honey

Instructions

  1. Pre-heat oven to 350.
  2. Bring a large pot of water to a boil and add about five shakes of salt.
  3. While water heats up, wash all the potatoes, peel with a potato peeler, and dice into 1 inch pieces.
  4. Once water is boiling, place sweet potatoes in the water and cook for 20-25 minutes until they are soft and break apart easily when stabbed with a fork.
  5. Before draining the water, reserve a 1/4 cup of the potato water and set aside.
  6. Drain the sweet potatoes and add them back into the pot or to a large mixing bowl. Do not cool.
  7. Using a potato masher or electric mixer, mash the sweet potatoes. If the potatoes are tender enough they will mash with no problem.
  8. While the mashed sweet potatoes are still hot, add the butter in a few cubes at at time and mix. The butter should melt and combine easily.
  9. Then add the milk, 1 tbsp brown sugar, seasonings, and 1 tbsp of potato water and mix on med low speed until combined. They should be smooth and creamy. If they are not creamy enough, add an additional tbsp of potato water.
  10. Spoon the sweet potato mixture into a greased casserole dish. Top with pecans and 1/2 tbsp of brown sugar.
  11. Bake in the oven for 10 minutes.
  12. Remove from oven and drizzle with honey and top with feta cheese crumbles. Bake for another 5 minutes.
  13. Serve immediately.

You will not use all of the reserved potato water.

Storage and Reheating

Store leftover sweet potato casserole in the fridge for up to 4 days. The feta will firm up and the honey will solidify slightly, but both come back to life when you reheat.

Reheat individual portions in the microwave in 40 second intervals until the center is warm, or reheat the whole casserole covered with foil in the oven at 300°F for 15 to 20 minutes. If you want to crisp up the top again, remove the foil for the last 5 minutes.
