This one works because it leans into salt, acid, and contrasting flavors that are meant to be together. A little sweet, very refreshing, a hint of spice, with crunchy onions and salty feta cheese. This simple salad was made for summer picnics when you are craving something light and fresh!

Melon Salad Ingredients

This easy summer salad recipe is not your ordinary green salad but definitely brings the flavor! It uses only 10 ingredients including the tangy dressing. Let me share what I used and what ingredients will give you the best results.

Honeydew Melon – This is your base for the salad. Go for a melon that feels heavy for its size and has a slightly waxy rind with a faint sweet smell at the stem end. If it smells like nothing, it will taste like nothing. Underripe melon is crunchy and flavorless. Overripe melon is mushy and fermented. You want that perfect middle zone where it is sweet, juicy, and firm enough to hold its shape when cubed. Cut it into rough one inch pieces. You can also buy pre-chopped honeydew from the grocery store for faster prep.

Cucumber – The second main ingredient in this refreshing salad is cucumber. You do not need to peel it. Just wash, dice, and go. They add a neutral, hydrating crunch that keeps the salad from feeling like a dessert. Regular or English cucumbers work in this dish.

Red Onion – Red onions are the best choice here for the sharper flavor and because they are not cooked. You could get away with a white onion in a pinch but red is really the best choice here.

Jalapenos – Jalapenos are optional but they add just a little bit of heat that contrasts SO well with the sweet of the melon and the crispness of the cucumber. For a spicier salad leave the seeds in. For a light heat removed the seeds.

Feta Cheese – Feta adds notes of salty, tangy, and creamy in a way that punches the flavor up a notch and contrasts the bright flavors of the honeydew and cucumber nicely. I normally use crumbled feta cheese because it’s easy but you can use a block and crumble it yourself as well. While there are different kinds of cheese, feta really is the best option.

Dressing – This is a simple dressing using olive oil, honey, lemon juice and a little bit of salt and pepper. You don’t need much with this salad since the melon makes plenty of its own juices.

How to Cut a Whole Honeydew Melon

Using a sharp chefs knife, slice the honeydew in half and scoop out the seeds. Cut each half into wedges, then slice off the rind. Sweet melon meets salty cheese in this absurdly simple salad. This easy honeydew melon salad is the summer side dish you didn’t know you needed. Sweet honeydew, crisp cucumber, salty feta, sharp red onion, and a little jalapeno spice mixed with a light lemon juice dressing that pulls everything together. It’s a light and refreshing side packed with bright flavors, perfect for your next summer BBQ, cookout, brunch, or summer picnic.


Ingredients

  • 2 1/2 lbs Honeydew Melon cubed (about 1/2 a honeydew)
  • 1/2 Cucumber cubed
  • 1 Jalapeno diced with seeds removed
  • 1/2 cup Red Onion diced
  • 1/2 cup Feta Cheese
  • 1 tsp Olive Oil
  • 1 tsp Honey
  • 1/4 Lemon juice from
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper

Instructions

  1. Using a sharp chefs knife, slice the honeydew in half and scoop out the seeds. Cut each half into wedges, then slice off the rind. Cube the flesh into roughly one inch pieces and drop them into a large bowl.
  2. Cut the cucumber into quarters lengthwise, then slice across into bite sized pieces. Aim for chunks that are roughly the same size as your melon cubes and toss them into the bowl with the honeydew.
  3. Dice the red onion and jalapenos and add to bowl. To speed up chopping I use this slicer.
  4. Dress with honey, lemon juice, olive oil, salt and pepper. Stir until combined.
  5. Top with crumbled feta cheese.

Notes

For best results allow at least 30 minutes in the fridge before serving. But note this salad should be assembled just before serving as it becomes watery quickly.

Storage

This salad does not love being stored for days, but you can chop all the ingredients ahead of time and toss everything together just before serving.

Store it in an airtight container in the fridge for up to 24 hours. After that, the cucumber starts to release water and the melon gets mushy. The feta holds up fine, but the texture goes downhill fast. If you know you will have leftovers, dress only the amount you plan to eat and keep the rest of the components separate.
