Description
Sweet melon meets salty cheese in this absurdly simple salad. This easy honeydew melon salad is the summer side dish you didn’t know you needed. Sweet honeydew, crisp cucumber, salty feta, sharp red onion, and a little jalapeno spice mixed with a light lemon juice dressing that pulls everything together. It’s a light and refreshing side packed with bright flavors, perfect for your next summer BBQ, cookout, brunch, or summer picnic.
Ingredients
- 2 1/2 lbs Honeydew Melon cubed (about 1/2 a honeydew)
- 1/2 Cucumber cubed
- 1 Jalapeno diced with seeds removed
- 1/2 cup Red Onion diced
- 1/2 cup Feta Cheese
- 1 tsp Olive Oil
- 1 tsp Honey
- 1/4 Lemon juice from
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
Instructions
- Using a sharp chefs knife, slice the honeydew in half and scoop out the seeds. Cut each half into wedges, then slice off the rind. Cube the flesh into roughly one inch pieces and drop them into a large bowl.
- Cut the cucumber into quarters lengthwise, then slice across into bite sized pieces. Aim for chunks that are roughly the same size as your melon cubes and toss them into the bowl with the honeydew.
- Dice the red onion and jalapenos and add to bowl. To speed up chopping I use this slicer.
- Dress with honey, lemon juice, olive oil, salt and pepper. Stir until combined.
- Top with crumbled feta cheese.
Notes
For best results allow at least 30 minutes in the fridge before serving. But note this salad should be assembled just before serving as it becomes watery quickly.
