They are full of tangy flavor, lean protein, and crisp lettuce and veggies while still being a tasty guilty pleasure. This play on a chicken wing and a taco uses bold flavors with blue cheese and a buffalo chicken mixture to make the best low carb wraps. The best thing is, these chicken wraps are easy to make and the whole family will love them! Trust me, this great recipe will find its way into your regular meal plan because they are that good! What is a Lettuce Wrap?

Lettuce wraps are almost a cross between a taco and a burrito only instead of using a tortilla, they use lettuce as the vessel to wrap up the ingredients. They are a great low carb option when you are craving the flavors of your favorite taco but don’t want a salad. These easy buffalo chicken lettuce wraps combine all the delicious flavors of a traditional buffalo chicken wing and fresh veggies into a handheld perfect meal for lunch or dinner.

Ingredients

These easy spicy buffalo chicken lettuce wraps are the perfect recipe for a light dinner on busy weeknights. Here are my notes on the ingredients that will give you the best results.

Ingredients on a counter include a package of ground chicken, ranch seasoning, Buffalo sauce, a wedge of lettuce, shredded purple onions, sliced celery, shredded carrots, and a container of blue cheese dressing. Background is a light gray wall.

Romain Lettuce – I used a few heads of romaine lettuce to make my wraps, but you could also use butter lettuce (aka Boston lettuce) if you can find it. But the best lettuce in my opinion is really just the larger leaves on the outside that you can fold up kind of like a taco. As you peal away the leaves they get smaller on the inside and harder to add the ground chicken filling. I don’t recommend using iceberg lettuce since it is usually sold in large round heads vs longer boat shaped heads.

Ground Chicken – For the chicken filling in this recipe I used ground chicken to make it more like a taco and evenly distribute the spicy buffalo chicken in the wrap. However, you can also use chicken pieces, rotisserie chicken, or shredded chicken breasts. I have made these wraps with all of these chicken options but the ground chicken is my favorite. You could also make these with ground turkey for a similar flavor.

Buffalo Hot Sauce – You can use any brand of buffalo wing sauce you want here, but my personal favorite is the Buffalo Wild Wings medium spicy buffalo sauce. Our grocery store sells these bottled sauces in the condiment section. But it’s really your personal preference here. Just make sure it’s buffalo wing sauce and not just hot sauce. You can also make your own homemade buffalo sauce if you prefer.

Ranch Dressing Mix – To prevent the sauce mixture from becoming too runny I use the dry ranch seasoning. However, you could also use regular ranch dressing instead.

Four-step cooking process on a stove: Ground chicken browns in a pan; a bottle of ranch seasoning sits nearby. Spicy orange sauce is added, then mixed in with a spatula, creating a seasoned meat mixture.

Blue Cheese Crumbles  – You either love blue cheese or you hate it. I personally love blue cheese and think it makes a great topper on these buffalo chicken lettuce wraps. But if you are not a fan of the moldy looking cheese, feel free to skip it or use your favorite cheese instead.

Carrots – To add a little more nutritious veggies I always add some shredded carrots. You can buy a whole carrot and shred it in the food processor or buy a bag of pre-shredded carrots, whatever you prefer.

Red Onion – I chose to use a red onion here since it is raw and doesn’t get cooked. Red onions are the best onion to use in raw applications and have a slightly spicy flavor to them. You can also used caramelized onions if you prefer which can be done with a white, yellow, or red onion. Green onions would also work in this dish.

Celery – Commonly paired with buffalo chicken, celery gives these lettuce wraps a little extra crunch and flavor. I like to dice celery sticks up into small pieces so they are not hard to eat.

Additional Toppings – Feel free to add any additional toppings you love like bell peppers, creamy avocado, or even crispy fried onions.

  • 12 Heads Romaine Lettuce
  • 1 lb Ground Chicken
  • 1/2 cup Buffalo Wing Sauce
  • 1 tbsp Dry Ranch Seasoning
  • 1/4 Red Onion sliced
  • 1/4 cup Shredded Carrots
  • 2 Celery Stalks diced
  • Blue Cheese Crumbles
  • Ranch Dressing drizzle for topping (optional)

Instructions

  1. Wash and dry the romaine lettuce leaves with paper towels and set aside.
  2. In a large skillet over medium heat brown the ground chicken until it is cooked through, about 7 minutes.
  3. Drain the meat and return to the pan.
  4. Season the cooked chicken with the dry ranch and the buffalo sauce and stir until combined.
  5. Fill each of the lettuce cups with about 2-3 tablespoons of the meat mixture, depending on size.
  6. Top with red onion, carrots, celery and blue cheese crumbles.
  7. Garnish with an optional drizzle of classic ranch dressing and/or additional buffalo sauce.
