Quick Homemade Teriyaki Sauce Recipe – No Ginger
Teriyaki is a staple sauce in my kitchen and it is one of the easiest condiments to make! I almost always make my own homemade teriyaki sauce because it is so simple. I use this sauce at least a few times a month and it only takes five minutes to make. The savory-salty-sweet flavor is perfect for teriyaki chicken, teriyaki salmon, or stir fry. What is Teriyaki Sauce?
Teriyaki is a delicious sauce with a sweet and salty flavor profile that is very popular in Japanese cuisine. It is often served over stir fry noodles, chicken, vegetables, salmon, or white rice. Teriyaki sauce is among many cooking sauces frequently used as a marinade, dipping sauce, baster, or a great glaze. Authentic teriyaki sauce is usually made with soy sauce, sugar, mirin, and sake. My easy homemade teriyaki sauce simplifies the ingredients to use items commonly found in the grocery stores because most places do not stock mirin and sake.
Why I Love This Recipe
This is probably one of the easiest sauces to make at home. It uses only four basic ingredients, is ready in 5 minutes, and requires no cooking or fancy tools! While I do use store-bought teriyaki sauce from time to time, this homemade version is so easy and I almost always have soy sauce and brown sugar on hand.
Ingredients
Making your own homemade sauces is easier than you think! This easy teriyaki sauce recipe only requires four pantry staples you probably already have in your kitchen. Let me walk you through what I used and how easy this sauce is to make.
Soy Sauce – This simple ingredient is a staple in my pantry and I use it in almost all of my Asian dishes. It is a very thin sauce with a high salt content. Because of this I always use the low-sodium soy sauce to avoid an overly salty dish but you can use regular soy sauce if that is all you have. They say that coconut aminos or tamari are the best substitutes for soy sauce, but I disagree. I think the closest substitute is Ponzu sauce which I have actually used in this recipe when I accidently ran out of soy.
Brown Sugar – Light brown sugar or dark brown sugar? While these two can be substituted for one another they will not yield the exact same flavor. Brown sugar is simply sugar with molasses added, but how much is what gives you dark brown sugar or light. As their descriptions suggest, light brown sugar has less molasses than dark. You can use either version here but dark brown sugar will be a little sweeter than light. I used light brown sugar in my teriyaki recipe.
Garlic  – I always use fresh garlic from the jar because it’s convenient and has a softer flavor than garlic powder. If you choose to use garlic powder you will not need as much. Substitute 1/8 tsp of garlic powder for 1 tsp of fresh. You can also use a garlic clove and mince it yourself.
Corn Starch – This is the thickener for the sauce. I choose to use it over flour because it has less impact on the flavor. For a thick teriyaki sauce, add an additional 1/2 tsp until desired thickness is reached.
Additions – To keep this recipe super simple I normally make it with only the above ingredients. But if I have it on hand I add some fresh ginger and red pepper flakes for a little kick. You can also add a little bit of pineapple juice, lime juice, or rice wine vinegar for a tangy flavor. I have made this using all these additions and you really cannot go wrong!

Ingredients
- 1/3 cup Low Sodium Soy Sauce
- 1/3 cup Brown Sugar
- 1 tsp Garlic minced
- 1/2 tsp Corn Starch
Instructions
- In a small bowl, mix soy sauce, brown sugar, garlic, and corn starch with a spoon or French whisk.
- It will thicken as it sits. I only cook it when adding it to my dishes just as you would with traditional teriyaki sauce.

Storage
The best way to store leftover teriyaki sauce is in the fridge in small glass mason jars for up to 5 days. It will thicken up as it sits.
When to Make Teriyaki Sauce
This super easy sauce makes a great dipping sauce, marinade, or glaze. I most frequently use it to top jasmine rice and the frozen wontons from Costco. But it also works really well for teriyaki salmon bites, ramen noodles, salmon tacos, stir fry, or on top of chicken. This is a good recipe for backyard BBQs or weeknight dinners because you can whip it up in just five minutes. Trust me, everyone will love simple sweet and savory sauce!
