Teriyaki Salmon Bite Rice Bowl Recipe with Avocado

What is a Rice Bowl?

Bowl recipes are a great way to combine your protein, fresh ingredients, starch, and sauce into the same bite. Rice bowls and quinoa bowls have grown in popularity over the last few years and make an easy recipe. Usually they include a meat or protein, fresh veggies, something crunchy and a sauce or dressing to tie it all together. They are perfect for weeknight dinners and lunch.

Ingredients

These easy teriyaki salmon bowls only require a few simple ingredients and steps to make. You may even have these items on hand. Let me walk you through what I use and why and what ingredients will give you the best results.

Salmon Filets – I have used both fresh salmon filets and frozen salmon for this recipe and both work just fine. If you choose to use frozen, just thaw them in cold water first. When I use fresh, I remove the salmon skin but you can leave it if you like eating the skin. If you keep the skin on, make sure you place them skin side down in the air fryer.

I do think salmon works best for this recipe. I have tried making it with tuna and tilapia and neither of them were very good. Salmon is a richer tasting fish with more fatty acids that give these bites extra flavor.

Rice – The base of this bowl is rice. I personally like jasmine rice the best because it is slightly sweet and adds more flavor than white rice or brown rice and it isn’t quite as dry. You can use regular cooking rice or instant. You could also use sushi rice but I personally think it is too sticky for this recipe and you will need to season it with rice vinegar and sugar.

Teriyaki Sauce – Before adding some bread crumbs to the salmon I coat them in my own teriyaki sauce with low-sodium soy sauce. You can buy teriyaki sauce at your local grocery store in the international foods aisle but I usually make mine homemade since I regularly stock teriyaki sauce ingredients and it’s very easy to make. Not to mention the bottled teriyaki sauce usually has a lot of extra sodium and unnatural sounding ingredients.

Panko Bread Crumbs – Coating the side, bottom, and top of the filets with bread crumbs give the salmon an extra crunch and texture.

Sriracha Mayo – If you have never had Sriracha mayo it’s essentially spicy mayonnaise. It has the same tangy taste as regular mayo with a little spicy kick. If you do not have the store bought version, you can easily make a homemade spicy mayo which I have done many times. All you need is mayonnaise and sriracha. Sometimes I add a little fresh lemon juice or lime juice if I have it and salt and pepper, but that’s really all there is to it.

Green Onions – Green onions pair really well with Asian style cuisine, add a lot of flavor, and are best served raw. All that makes them the perfect topping for salmon bowls.

Fried Onions – I am a firm believer that these crispy onions can be added to just about anything! Not just green bean casserole, haha! But seriously, I put them on salads, quesadillas, tacos, wraps, you name it! They give any dish a little crunch and savory saltiness.

Avocado – This is the perfect compliment to the flavors in this teriyaki salmon rice bowl and it adds a bit of creaminess. Avocado is one of my favorite toppings and pairs really well with the sweet and salty teriyaki sauce.

​Cooking Method

I make these almost every week and I have found that cooking salmon bites works best in the air fryer because it is quick and easy. I have a Ninja Foodi air fryer and it only takes a few minutes to cook this way. In theory you could bake them in the oven, but I have not personally tried that. In my experience, the oven usually takes a bit longer to cook items especially if you are cooking in a gas oven.

When cooking the rice I make it on the stove top. However, you can cook the rice in a rice cooker or an Instant Pot if you have one.

Prepping the Salmon Bites

First, place salmon fillets skin side up and remove the skin from the raw salmon with a sharp knife. Then cut the salmon into small cubes about 1-2 inches big. Then set up a breading station to coat the salmon pieces in the teriyaki sauce and bread crumbs. One bowl with teriyaki sauce and one with bread crumbs. First, dip each piece into the teriyaki sauce and then use your other hand to dip and coat in the bread crumbs. Then add each piece to a small greased pan that fits in the air fryer. Once all the salmon chunks are coated, add them to the air fryer and start cooking.

Teriyaki salmon bite rice bowls are my new favorite way to make salmon! They are a filling meal that combines homemade teriyaki sauce with protein packed tender salmon and fluffy rice. Ingredients

  • 1 cup Jasmine Rice
  • 2 Salmon Fillets cubed
  • 2 cup Panko Bread Crumbs
  • 2/3 cup Teriyaki Sauce (store bought or homemade) divided
  • 1 Avocado sliced
  • Crunchy Fried Onions for topping
  • Sriracha Mayo for topping
  • Green Onion for garnish

Instructions

  1. In a small pot, add 2 cups of water and bring to a boil.
  2. Once the water is boiling, add 1 cup of jasmine rice and reduce heat to low and cover. Cook for 20 minutes for regular rice or follow box instructions for instant rice.
  3. Set the temperature of your air fryer to 400 degrees F. Pre-heating is not required, but I think it helps for the fryer to heat up for a couple of minutes prior to adding the salmon.
  4. Spray the inside of the air fryer with cooking spray or use a small pan that fits in the air fryer to prevent the salmon from sticking to the bottom.
  5. If you are using fresh salmon, remove the skin before cubing.
  6. With a sharp knife, cut the salmon fillets into cubes about 1-2 inches depending on the thickness of your fillets.
  7. Using two small bowls set up a breading station with half of the teriyaki sauce in one bowl and bread crumbs in the other. You will use the other half of the sauce after they are done cooking. Do not cross contaminate.
  8. Coat each cube in the teriyaki sauce first and then the bread crumbs. This works best if you use one hand for the sauce and one for the breading.
  9. Once the salmon is coated place on a greased pan or piece of parchment paper that will go inside the air fryer. NOTE: be careful with parchment paper. If it is too big it can burn in the fan.
  10. Place the salmon pieces inside the pre-heated air fryer and cook for 6-8 minutes flipping halfway through. I use my mega zone for this and can make both fillets.
  11. When the bites are done, remove immediately and do not allow them to cool in the fryer. I find that this makes things less crispy. As soon as the time ends, open the fryer and turn it off. Cool for a few minutes with the drawer or lid off.
  12. When the rice is cooked, fluff with a fork and scoop into bowls and top with cooked salmon bites and drizzle with remaining teriyaki sauce.
  13. Top with green onions, avocado, crunchy onions, and a drizzle of sriracha mayo.

Notes

Air fryer ovens may differ in size and temperature so your cooking time may vary. Two salmon fillets makes about 36 bites.

These delicious salmon teriyaki bowls are a filling lunch or dinner that can be made in 30 minutes. This is my go to meal when I am craving salmon and I often fill it with any fresh veggies I have on hand like bell peppers, carrots, or broccoli.
