Description

A play on a classic middle eastern dish, this easy hummus recipe only calls for a few ingredients and no tahini is required. Roasted red peppers, garlic and a little heat make this a must try delicious dip.


Ingredients

Units Scale
  • 1 can chickpeas
  • 2 tbsp peanut butter
  • 6 oz roasted red pepper
  • 1 tbsp olive oil
  • 2 tsp garlic minced
  • 1 1/3 tbsp lemon juice (1 tablespoon + 1 teaspoon)
  • 1 tbsp sriracha
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • salt & black pepper (to taste)

Instructions

  1. Combine all ingredients in a food processor in the order listed above.
  2. Blend on high for 2 minutes or until smooth
  3. Scoop into a serving dish and enjoy
  4. Leftovers can be stored in the refrigerator in an airtight container for up to 1 week

Notes

  • Sriracha is a hot chili sauce. If you do not like spicy food, omit this ingredient.
  • If you prefer tahini, you may use tahini instead of peanut butter
  • You can top with red pepper flakes, garlic, and/or a little extra olive oil
  • You can garnish with fresh herbs
