Description

If you love lettuce wraps and bold Asian flavors you have to try this tasty wrap! These Thai peanut spicy ground turkey lettuce wraps are a guilty pleasure while still being a low carb option. They are full of umami flavor, lean protein, creamy peanut butter, and crisp lettuce and veggies. They are perfect for busy weeknights or a great appetizer. Trust me, these will become a part of your regular meal prep because the whole family will love these!


Ingredients

Thai Peanut Sauce 

  • 1/2 cup Peanut Butter
  • 2 tbsp Hoisin Sauce
  • 2 tbsp Sriracha
  • 1 1/2 tbsp Low Sodium Soy Sauce
  • 1 1/2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 6 tbsp Water

Lettuce Wraps

  • 12 Heads Romaine Lettuce
  • 1 lb Ground Turkey
  • 4 Green Onions chopped
  • 1 tbsp Olive Oil
  • 1/4 cup Shredded Carrots
  • 1/2 Yellow or Red Bell Pepper diced
  • 2 tbsp Peanuts crushed

Instructions

Sauce Instructions

  1. Combine all ingredients in a small bowl and blend with an immersion blender or a food processor and set aside. Note, this is a thick sauce.

Lettuce Wrap Instructions

  1. Wash and dry the lettuce leaves and set aside.
  2. In a large skillet over medium heat, add a small amount of olive oil and sauté the bell pepper and shredded carrots until soft. Season with salt and pepper to taste. Remove from heat and set aside.
  3. In the same frying pan, cook the ground turkey over medium to medium-high heat until it is no longer pink, about 6-8 minutes.
  4. Drain the meat and return to the pan.
  5. Pour 1/2 to 3/4  of the Thai peanut sauce over the meat and simmer on low heat for about 2 minutes.
  6. Before removing from the heat mix in the sautéed red pepper and carrots.
  7. Add peanuts to a Ziplock bag and use the back of a spoon to crush them into smaller pieces.
  8. Fill each of the lettuce cups with about two tablespoons of the turkey mixture, depending on size.
  9. Top with green onion, peanuts, and a drizzle of the remaining sauce.

Notes

Note, you do not have to cook the veggies if you prefer crunchy veggies. I think it is good both ways.
