Description

No holiday season would be complete without mini bourbon chocolate pecan pies! These easy bite sized-pies are a simple twist on a traditional recipe. By using a homemade pecan pie filling with a store-bought pie crust these mini pies are simple yet delicious! They make great individual desserts for Thanksgiving and holiday gatherings, full of crunchy pecans, chocolaty goodness, and a hint of bourbon.


Ingredients

  • 1 pkg Mini Pie Crusts

Pie Filling

  • 1/4 cup Dark Brown Sugar
  • 3/4 cup Chopped Pecans
  • 1/2 cup Semi Sweet Chocolate Chips
  • 1 tbsp Unsalted Butter (room temperature)
  • 3 tbsp Dark Corn Syrup
  • 3 tbsp Light Corn Syrup
  • 1 1/2 tbsp Bourbon
  • 1 Egg
  • 1/2 tsp Vanilla
  • 1/8 tsp Salt

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a large bowl or the bowl of a stand mixer mix together all the pie filling ingredients until combined.
  3. Roll out the pre-made pie crust and cut out the individual perforated pie doughs.
  4. Generously grease a muffin pan with cooking spray and place each of the circles of dough over the center of each cup and press into place. You can use a small glass to help flatten out the bottoms.
  5. Scoop pie filling into the pie crusts until they are about half full.
  6. Bake for 20-25 minutes or until golden brown. Cooking times may vary. Pies are done when a toothpick pokes the center and comes out clean.
  7. Cool for at least 15 minutes before removing from the pan. You can use a small knife to score around the edges if need be.
