Ingredients
- 4 cups Spinach Leaves
- 1/2 Red Onion
- 1 Green Apple sliced
- 1/4 cup Pecans
- 1/4 cup Dried Cranberries
- 1/8 cup Blue Cheese Crumbles
- Raspberry Vinaigrette
Instructions
- Wash and slice one granny smith apple. If you are making ahead of time, coat the apple slices in a little lemon juice or lime juice to prevent them from turning brown.
- Slice red onion into strips.
- Wash and dry spinach. You want to make sure it’s completely dry before assembling the salad or it may be soggy.
- Toss spinach, red onion, apple slices, pecans, dried cranberries, and blue cheese in a large salad bowl.
- Add as little or as much dressing as you like right before serving.
- Store undressed salad in the fridge in an airtight container for up to 4 days.
