Creamy Whipped Feta and Balsamic Bruschetta Dip

Description

A simple combination of feta, cream cheese, and Greek yogurt make the perfect base for fresh bruschetta. Ingredients

Whipped Feta 

  • 4 oz Feta Cheese
  • 1/4 cup Plain Greek Yogurt
  • 3 tbsp Cream Cheese
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Garlic minced
  • Lemon Juice from 1/4 of a Lemon
  • Salt and Pepper to Taste

Tomato Mixture 

  • 1/2 cup Roma Tomatoes diced (about 4 Tomatoes)
  • 1/4 cup Fresh Basil chopped
  • 1/4 cup Red Onion diced
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Garlic minced
  • 3 tsp Balsamic divided

Instructions

  1. In a medium sized bowl, using a mixer whip together the feta, Greek yogurt, cream cheese, olive oil, garlic, lemon juice, and salt and pepper until smooth. Set aside.
  2. In a separate bowl gently toss the diced tomatoes, basil, red onion, olive oil, garlic, and 1 1/2 teaspoons of the balsamic vinegar together.
  3. Add the whipped feta to the bottom of a shallow serving bowl or plate.
  4. Place the tomato mixture in the center on top of the cheese mixture.
  5. Using the back of a spoon or your finger, create a divot like moat around the bowl outside of the bruschetta toppings for the additional balsamic vinegar.
  6. Slowly pour the extra 1 1/2 teaspoon of balsamic vinegar into the moat you created.
  7. Dip with pita chips or crackers.

Notes

I do not recommend making this ahead of time because it starts to look muddy and looses the pretty factor. If you are short on time, make the whipped feta and dice up the bruschetta ingredients but do not mix anything until right before serving.
